Cornbread with collard greens is a must. You haven't truly experienced southern food until you try greens and cornbread. Y'all should also try other southern cooking/soul food besides just New Orleans style. Alabama, Georgia Tennessee, the Carolinas. Even Florida has locally owned restaurants with great southern cooking. I say southern because when I was young I heard about soul food and wondered. When I finally went to a friend's reunion, this friend was black, I found out that soul food is what my mom had cooked my whole life but, we just called it southern food.

@@thebritstry You absolutely have to try sweet potato pie. Preferably in Georgia. My wife was from Georgia and fixed the best sweet potato pie I've ever eaten. It's similar to pumpkin pie but so much better. I have had really good sweet potato pie in Florida but, I've never tried it in a restaurant. Southern or soul food style oxtails are really good. My wife used to fix pigtails and rice that were excellent. I doubt you'd find that in a restaurant though. But you can get oxtails in restaurants. They've recently become a gourmet item so, they've gotten very expensive. They used to be fairly inexpensive. Even Gordon Ramsay has cooked them.

@phobiaone - What people that like to lay claim to New Orleans food will stop doing is giving credit to Cajun/ Creole people, when saying Creole food is another way of crediting French/ Cajuns with food that is not theirs and the continuing erasing of the enslaved Africans. New Orleans food is the food of the African enslaved people or considered Soul Food today but, you will not find any of these dishes being served in the Native American or french cultures. As for as Caribbean cultures, central and South American and even in South Carolina where the Gullah Ghee people live, they serve the same foods by similar names that is the culture of the enslaved people including BBQ. The only reason why people can lay claims to African Americans food is because, we never had or was given any money to make money off of our intellectual property or culture and our culture becomes American culture and currency for anyone that wants to claim it. We are America’s ORIGINAL TOP CHEF’s!

I'm from Mississippi about 3 hours north of New Orleans. I'm 60 now, but when I was young, my Mom would cook ham, black-eyed peas, butter beans and cornbread for supper. Sometimes we would have turnip greens and home made pepper sauce too for supper with the rest of it. We lived in Jackson, MS but half of our yard was a Garden that we worked in all the time. Then in the morning, Mom would warm up the left over cornbread in the oven, she would split it open and smother it in butter. Then we would pour some strong backstrap molasses over it for Breakfast with milk to wash it down. It was the BEST. I still love that sometimes for desert instead of breakfast. Another way to enjoy cornbread is to make it a little sweet like my Mom's, butter it, then pour black-eyed peas and juice over it.

I think I'm loving these videos as much as you're enjoying the food and you're making me hungry. We need a 1 bedroom apt and have got 2 tickets to California. LOL! Really loving the food. May not love New Orleans so much in the summer time as it gets really hot and humid. Red Beans and Rice plus Gumbo are considered to be Creole/Soul food. Usually considered to be a mix of French, African, Caribbean and Native American cultures. Next stop Austin Texas and Terry Blacks for BBQ. Oh, Cornbread really good but kind of on the dry side so dipping it in the Red Beans and Rice sauce was a good idea. More commonly you put butter and honey on it.

@golfr-kg9ss New Orleans food is the food of the African enslaved people or considered Soul Food today but, you will not find any of these dishes being served in the Native American or french cultures.

Louis Armstrong, who was from New Orleans, would sign off his letters with "Red beans and ricely yours." There are as many recipes for gumbo as there are cooks. I didn't see any okra in it, so I suspect it was a filé gumbo (which uses powdered sassafras leaf instead of okra as a flavoring and thickener). Li'l Dizzy's has good po' boys. I grew up around New Orleans! It's fascinating to see people experiencing the food I grew up with for the first time! One thing to note : next time I recommend dipping the cornbread in the red beans and rice, or even crumbling it up and mixing it together (like one would crumble crackers into soup). It makes them less soupy, and the cornbread absorbs the juices without getting too soggy, adding a nice thick texture to the dish. As for where we get all those flavors for the gumbo, New Orleans is one of the oldest "melting pots" in the U.S. It's a mix of many cultures, especially when it comes to the food and spices. Great video! I'm hungry now.
