@@ClovesnSpice actually they were half correct, process of making white sugar is they take out the molasses (if I'm not mistake) from the raw sugar (which is brown in color). N brown sugar is added molasses to make it brown-ish. Sorry if I am wrong. Hahaha

I lived in Fiji for a couple of years but it may be just me but they had brown sugar and it was way sweeter than the white we had in Australia. I usually have two tea spoon of sugar for tea but with brown sugar that is way too sweet so I used only one.

Let me clarify more on Jaggery and thus adding a bit more here. Table sugar is 99.9% sucrose while Jaggery is about 95% sucrose. The other 5% being molasses. So what damage sugar does with 100% efficiency, jaggery does it with 95%. Basically the amount of sweets we consume has exploded in the last 30-40 years. We need to revert back to as close as possible to zero sugar/jaggery for a healthy life. sugar uses more chemicals in processing than Jaggery, however the list of problems mentioned with sugar is not because of those chemicals but because of sugar /Jaggery (sucrose) itself. So use or not of chemicals does not make much of a difference. About our body requiring glucose/energy. Yes we do need it and our digestive system is well endowed to extract it from the most stubborn of the carbohydrates. Our body can extract glucose from even fibres in food. We don't need any processed sugar. Now as sucrose is the primary content of both sugar and jaggery, let me explain it a more in detail. Sucrose is a complex sugar made of 50% glucose and 50% fructose. Glucose is absorbed by the blood and used as energy in the cells. Fructose is converted by the liver into fat and deposited in places you don't want it to be deposited in. More on Glucose - Glucose has a dangerous property called 'glycation' . Which is the root cause of most of the issues highlighted earlier. Glucose attaches itself to proteins and fats in our body and glycates them . Once it attaches to our proteins this is irreversible. The proteins cannot do their job. Now higher your blood glucose more is the amount of glycated proteins. That is why people with diabetes have so many complications. The glucose interferes in most of their protein functions. Our DNA is also a protein, and glucose can even damage it triggering cancers. The damaged collagen in our arteries results in High BP Everybody organ you can think of is made of protein and glucose interferes with each one of these. More on fructose - When fructose is converted into fat in the liver one of the byproducts is cholesterol. Higher the sugar consumption, more is the cholesterol your liver will make. So all the fruit juice and honey you consume ends up as fat in your belly and other corners of your body... Some gets deposited on the liver itself. Good news is whole fruits are an exception.... One glass of orange juice, requires about 4 oranges. However you eat 4 whole oranges, your lunch is done. So basically the fibres in the oranges become your meal... These fibres also hold back a lot of fructose and does not let body absorb all of it. So you get only the required amount of sugars when you eat a whole fruit as opposed to a juice. Plus all the nutrition the fibres in a fruit have., When you juice it, all of that precious fibre is thrown away. So the bottom line - Both Sugar and Jaggery are as bad for health as it can be.

Like especially when they have some gastro intestine problems, old age problems, upset stomach etc etc. Why an healthy individual to have blended fruits or vegies. Nothing comes near to having a whole raw fruits.

Not all sugars are the same - it's a huge myth being pushed by ignorance and possibly by various interest groups (e.g. the sugar lobby and various food companies). For instance, honey is a sugar, but so is granulated sugar; and in the USA, table sugars must be sucrose (molecule of glucose + fructose) by legal definition. Though, honey and granulated sugar are not the same. 1 gram of granulated sugar is highly refined sugar and is only equal to a gram of honey by its weight. As a thought exercise, completely dehydrate honey of its water content. Now, in that same dehydrated honey, take a gram - there is even more sucrose in that gram than before. Take out all of the other non-sugar molecules and you'll refine it even further. At the end, there's about 25% of non-sugar molecules in honey that you can take out to refine honey to make sweeter. So, you'll need to know the _density_ of sucrose in addition to the mass of a given "sugar" to know exactly how much sugar you're consuming.

I beg to disagree with what you said that "sugar is sugar". I just tried to make caramel for my custard pudding and brown sugar is horrible because it does not become entirely liquid, it likes to stay as granules compared to white sugar, If you add water to the mixture it will stay liquid but not the consistency i'd like for my pudding. So no, sugar(brown) is *NOT* sugar(white), contrary to what you said.

@@sowhat... Actually you can compare the quantities since the molasses is in a very small quantity. Also the brown sugar is sweeter due to molasses which is composed of glucose and fructose, which are sweeter than sucrose.

In my morning cup of coffee - the only one i have in a day - I usually put some stevia sweetener because i hate bitter coffee. But sometimes i put a teaspoonful of brown sugar instead. It may not be much healthier than white refined sugar but it has a pleasant smell which enriches the taste. The white sugar is just very sweet and nothing more.
