The Brasso Seco Paria community held its Annual Bazaar to celebrate its food, fashion, art, and craft. Brasso Seco is lush and teeming with amazing flora and fauna. The beautiful surroundings give the feeling as if you've stepped into another world, a hidden gem along the North Coast in Trinidad & Tobago.
Some of the highlights of our visit to the Brasso Seco Paria Bazaar were the local favourites: Buccaneer Chicken, which is a preservation process for meats, born out of necessity, yielding delicious results. Fresh bread baked in the residual heat from a wood fire in a clay oven. Imagine fresh bread with a hint of smoky flavour... amazing! Last, but by no means least, in the lineup is "dhalaloo", a Brasso Seco Paria invention which combines two of our local faves: split peas dhal and callaloo into one hearty, nutritious soup. Dhalaloo is served as a side dish or can be enjoyed by itself.
Of course, no trip to Brasso Seco will be complete without sampling their Brasso Seco chocolates, which are made from cocoa grown right there in the community. This is the closest you can get to a bean-to-bar experience to enjoy chocolate the way it's meant to be enjoyed!
Events like this are a reminder that even within this relatively small space, we have a wealth of culturally diverse experiences to discover when you explore Trinidad.

😭 Chrisal, you shoulda put me in yuh pocket or even in de car trunk. Jus shif to de side a lil bit, I coming tru de screen. 😄 Not sure but I think what you called a birdhouse is really a model of a cocoa house. I've seen Mr Fullerton's stall at Santa Cruz Green Market years ago.

What what!? What what!? That is my girl self!! Crisal is in the house and spreading the love with the people. Crisal I love how you make everyone feel that they are being heard and appreciated. This clip was very informative, enjoyable and entertaining! That bucanner meat reminded me of the Peking duck on Canal street in Manhattan. I wonder if it tasted similar?? Well done Crisal!😊❤

Natural food remembered my mother dirt oven in Cedros best bread sweet bread Christmas Eve all ham meat pork chicken last thing in oven next day Xmas food cooked thanks to mother for teaching us local food and many more country foods the best can’t wait for my vacation to ttt I find you your host thanks and all who lived in Braddock peace ✌️ love ttt blessings 🇺🇸

My kinda life, once was my hometown, paria is the best. The way I grew up, top and bottom fire, dirt oven, fire side cooking, coal pot, river water, spring water and rain water, fruits and vegetables and living off the land, hunting, fishing, camping. My kinda life 😊❤

I remember from studying West Indian history in Trinidad, this is the method Arawak/Carib Indians used to preserve their meats. Pirates would trade for these meats, and it was from this trade that they became known as Buccaneers.
