back in my high school days the teacher said wipe the extra glue off with a wet rag .. if not the wood will not stain correctly .. is the newer glue better at taking in the stain ?

No. From what I've seen first hand the glue does not take stain but, most professional woodworking companies will joint, plane, and sand to where the glue is all gone and it will not interfere with stain.

Please explain WHY it's not the way to make a door, or put in a link which shows how you would do it, rather than just saying "That's not how to build a door." Just saying that with no additional information is pretty useless.
