Recipe: 4 cups AP flour 2 T baking powder 1 t baking soda 2 t salt 2 t sugar 12 T cold butter, cut into small chunks 2 c buttermilk (2 cups water & 8 T buttermilk powder) If using buttermilk powder, mix with water. Set aside. Mix dry ingredients. Cut in cold butter until “grainy”. Make well in center and pour in buttermilk. Fold dry ingredients until incorporated. Do not over mix. Flour space for rolling. Roll out dough and cut biscuits to desired thickness. Bake at 375 for 20 min or until lightly golden. Makes approx 14 biscuits.

1, Never twist the biscuit cutter when stamping out biscuits. This will compress the sides preventing the edges from rising properly. 2. Placing biscuits next to each other so that they support each other while rising during the baking process will allow each one to rise straight without being lopsided.

Hay, her biscuits looked delicious! I've made homemade BM-Biscuits since I was 17, and I don't know 2 people that make Delicious Biscuits and each one's technique is identical!! Every cook has their own style just like we all have different taste preferences. Her demonstration on "making" scratch buttermilk biscuits was right on, perfect;) To cut each out, as well placing them in the pan. To each their own❤️ Made me want some! Excellent tutorial, Honey and still sending prayers for you and your precious family 🙏💕🙏

Love that you bake your bacon (as do I)- makes breakfast much less messy and less dangerous. When I make homemade biscuits (from scratch or from a mix) I roll out the dough into a thick square and cut the dough into squares with my bench scraper or roll it up gently into a roll and lop off my biscuits with a very sharp non serrated knife. Those 2 options make biscuit making go a lot faster and less handling of the dough (and no scraps). I also let them sit on the baking sheet for a minute or so. They always turn out flakey and have great height. God bless!

I've watched a lot of tutorials on biscuits and I now see how twisting the biscuit cutter causes the finished biscuits to lean. So, I when I make them in future, I will be sure to resist twisting the cutter. I do love her recipe.
@suebean3873
@suebean3873 Жыл бұрын
It’s not just the twisting that makes them fall, you need to crowd them closely together in a smaller pan, then they cannot fall. I always was told to cook quickly and shorter time in a hotter oven. But these do look good. Whatever works for each of us, right?

Try shredding your frozen butter sticks and you won't need to cut in the butter with the cutter. I coat my butter with flour before grating so the butter doesn't stick. Use the large grate.

The reason your biscuits rise up sideways is because you twist your cutter. Just go straight down and dont twist. They will rise perfectly every time

If you Twist the cutter they don't Rise as High. Place in pan just touching don't cram in pan. When baked remember to butter the tops, then Flip over so the bottom won't sweat. So so Good.

Place your bisquits right next to each other or really close they will not fall over. I've been making biscuits for 46 years and the very first ones turned out beautiful. I watched my momma and granny growing up and that was my training. I was only 18 and my husband would invite his fellow sailors to supper cause he loved my biscuits and fried chicken. He gained about 60 pounds our first year if marriage cause I could only cook mashed taters gravy fried chicken biscuits spaghetti and steak French fries rice biscuits😂😂😂😂😂

I have made a lot of biscuits over the years and this is the BEST recipe I have ever used. I mix up the dry ingredients with the butter in a quart jar and store it in my refrigerator for those super busy mornings. It will last about 4 months. I have divided the recipe in half sometimes, I also change up the size of my cutter depending on how many biscuits I want or need. I use the big cutter to make breakfast sandwiches, the smaller cutter works great for homemade sausage gravy. Thank you so much for posting this recipe and all of the tips. God bless you!

This is almost identical to my recipe except I use brown sugar and helpful hint here..lol I freeze my butter and my cheese grater, then I just spray the inside of my grater lightly with oil and grate the butter in, less beating around with my pastry cutter and it makes it easier to get the butter evenly distributed. .. Great biscuits and it's nice to see this recipe getting around.. Oh and I am completely jealous of your canisters.

shamasi1968 See this is the thing about cooking there’s more than one way of doing something. I prefer the way she does it because it does leave some bigger pieces of butter which makes in that section puff up and even better.

@@bamanolan7482 If you want some larger bits, cut part of the frozen butter into the bowl, then grate the rest. Don't over knead your dough, the most I knead it is about 10 times.

So I found a recipe for buttermilk biscuits that called for 5 cups of flour, 2 cups of buttermilk, 1/2 c water, 2 packets of active dry yeast and 3/4 c of butter shortning. My first batch of yeast didnt seem to rise. 2nd one did so I got to work... my dough was so sticky so I kept working it and working it... LOL i baked them, they turned out ok, surprisingly.. then I found this, I could have saved my arms, tears, hands, etc. Lol, you make it look so easy. Thank you!!! Loving your videos.

yep, very nice clear video, easy to follow. Sadly, you can never make enough biscuits - I'm always amazed that no matter how much dough I make I never fill the baking pan!!! I would arrange the biscuits to touch each other so they raise up straight, or just not make then sooooo thick (and I do like a thick biscuit...) half and half AP with cake flour can make them more tender, too.

Hi there! Saw your channel earlier today. I see you are a fan of Noreen as am I. The comment you were making about cooking the eggs in the stainless steel pan. I don't know what heat level you are cooking them on, but the browning is from the eggs burning from too high of heat. Maybe try turning the burner down next time to mid low and cooking the eggs to a scramble over a longer period of time. Less chance of them burning.

I saw a lot of comments that people didn't know about the buttermilk powder. My mom was using that same buttermilk powder over 25 years ago! It's been around a long time!

Very nice, little tip, do not twist your cutter into the dough as you cut. Flour the cutter and go down once into the dough. I have used this recipe, it is by Southern Living, an old recipe. 😊😊😊😊
