Great channel. Currently working on marketing the Nacional cacao bean into the states, which grows in our small family farm. Besides being a common chocolate eatery, this is all new territory for me and finding your channel has been super informative.

Thanks for giving this constructive interview session. Also would like to clear your misconception that 'the cacao don't want to grow in Sothern India'. You are welcome to visit other parts of southern India like Kerala and Karnataka where Cacao is grown abundantly :)

That's why the main target is online, customers go on your website to buy, customers in the store get confused because there are so many chocolate bars that they buy the cheap ones!

can I use cocoa powder instead of crushed cocoa beans in my melanger

You can, you'll need to add about the same amount of cacao butter before adding sugar. However regularly cacao powder is made with lesser bulk cacao that lacks of aromas. You might need to add something like vanilla to overcome the bitterness

Amazing video. I have been learning so much from you. We are in the process of starting a chocolate brand in Sri Lanka. And we would love to see the possibility of learning from you and Dan about growing and processing as we have very good cocoa but the knowledge of the after harvest process is not so great. Looking forward tonh wrong back from you.

Criollo might have been wiped out in there in 1800s but those that were planted in the Phils earlier since 1600s could have retained criollo though all criollos interbred with each other, it was only in the 1980s that poor breeds were introduced here

Best cacao of world is from Colombia and Venezuela. Belgian used this. Best of the best.
