Caesar Salad with Chicken - Rotisserie Chicken # 20

4 ай бұрынQuick, light, delicious, and surprisingly satisfying. And if you leave off the croutons, even the strictest calorie counters will gobble this up. I’ll share the secret of a great salad even with minimal oil.
Caesar Salad with Chicken
Romaine lettuce, torn
Olive oil
Fresh lemon juice
Red wine vinegar
Salt
Parmesan cheese, shaved
Croutons
Rotisserie chicken
Add lettuce to a large bowl with a small amount of oil. Toss gently. (The longer you toss, the less oil you need.) Add lemon juice, vinegar, salt and cheese. Toss. Plate and top with croutons and chicken.

I never leave off the croutons and I make my own...so easy using stale bread and I love the crunch. Also, I've never had Caesar salad without either an egg or mayonnaise to make the dressing thicker and I've never had one without garlic in it. The most authentic have Anchovy Paste. This looks like a very nice and healthy meal, but I do question if it is truly a Caesar salad.

I agree that this is a nice salad but I too wouldn't call it a Caesar salad, although it does have some resemblance at least with romaine, croutons and parmesan.

Love the EVOO dressing trick. And living alone... I love a quick meal that's mostly assembly! I recently found the most beautiful blue and white bowl with a large flat edge all around. I have decided this is going to be my salad, soup or pasta bowl. The presentation is so appealing. And we do eat with our eyes first!

My grandmother was always concerned with how the food looked. Notice than many of the soups and stews can be frozen in individual portions.
