Those babies look fantastic! As a Mexican cook, I must warn everyone to never touch spicy peppers with your hands after they've been cut. Use utensils, gloves, or rub your hands with a thick layer of oil before handling them. For those of you who like spices, add onions and dried oregano if you want to keep it simple. Or, add thyme, garlic and a bay leaf for the full rounded flavour. All of these go in small quantities for this type of picking. For the original flavour, you first sweat the whole peppers, onion and a few carrots slices in a bit of oil on high heat, add the herbs at the end for a few seconds. Then add the vinegar mix and let cool before placing the lid.

@@Cici_mimi Of course we're not the only ones who eat spicy, we just eat much more than many other cultures because chilies are originally from Mexico. If she were making hot dogs I wouldn't notice anything right or wrong about it. In this case, I'm just trying to avoid an enthusiastic amateur from handling hot peppers, forgetting about it, and then touching their eyes (or, God forbid, "other delicate areas") with their spicy hands, as it doesn't wash off. So basically the comment refers to my experience in the matter and should be taken as nothing more than that. Have a beautiful day!

I love that she rinses her red onion to cut the harshness but will straight up bare hand some cut or sliced jalapeños!

Use your imagination; that's half the fun of cooking. 🙂 It looked to me like it was about 1 tsp. salt, & 1 tsp. of sugar. Not sure of jar size; maybe 16 oz.? 🤷🏾‍♀️

If you don’t remove at least some of the seeds, they will be sooooo spicy. They get spicier the longer you wait before eating them

Put the slices in a colander to shake out the seeds 😁 the spice is actually in the white pith inside the pepper. The seeds are just annoying and get stuck in teeth.

Pickles take days or weeks to proper pickle....what u taste after a couple of hours is just a salad with to much vinnegar

There's different ways of pickling what i call fast vs slow pickling. Obviously the slow pressure canning way tastes much better but i think this fast way is good for when u have a craving and not much time on ur hands

Yeah they both have their place. I feel that this method with jalapeños gives a more fresh bite to dishes. I even eat them on their own lol.
