Ingredients:
2 lbs of Light Red Kidney Beans
1lb of Bacon or Pork Jowl Bacon chopped
1 large onion diced
1/2 bell pepper diced
3 celery stalks diced
32 ounces chicken broth
1/2 stick of butter
2 dried bay leaves
Seasoning:
1/2 TBSP of salt
1 tsp black pepper
1 tsp garlic powder
1 tsp onion powder
1/2 tsp cayenne pepper
Season to taste before serving.
Instructions:
NOTE: Soak beans in water for 2 or 3 hours and remove dirt and rocks that may have hopped a ride with the beans. Make sure the water doubles the beans in the bowl.
1: Over Medium high heat, melt a half stick of butter into a 7 or 8 qt pot (anything that will hold 2 pounds of beans plus water)
2: Add chopped bacon to the pot and brown, the bacon fat will turn translucent.
3: Add the seasoning and the trinity (onion, bell peppers, and celery) Cook down the vegetables until they become soft. About 7 to 10 minutes, reduce heat to medium if needed
4: Add chicken broth, bay leaves, and 2 pounds of kidney beans already soaked, add water until the water level is 2 inches higher than the beans.
5: Bring up to a boil then reduce to a medium simmer and cover, stirring every 30 to 45 minutes.
6: When the beans are creamy and soft, you can mash some on the side of the pan and stir.
7: Season to taste and cook for an additional 10 minutes then serve.
