Growing up in Alabama, after a solid rain, we would wait until after school and then go into the ditches and culverts by the roads. Crawfish Everywhere..just wade through the water, reach down and grab em. We'd fill buckets..and then Eat em!!

Crazy how different you go about catching them in your area, I live in Oregon and have been catching and eating them since I was a kid. We get them in rocky bottom creeks and rivers and I've always called them crawdads.

crawfish farming is a relatively recent but fast growing industry in LA. The farmers already had crawfish living in their fields to begin with and the price is constantly rising, so they began trying to cultivate them too.

@@Leon-yg5gmnot completely true, rice can grow in and usually does in other states in as little as 2” of water with no levee around it. While in Louisiana we have levees around our ponds so the crawfish can burrow in and has everything to do with crawfish and hardly anything to do with rice. In fact I have multiple friends that only plant rice so the crawfish babies have something to cling to and for the adult crawfish a place to hide from birds. The rice is harvested and sold but it’s mainly for the crawfish. They buy “seed” crawfish from others and plant them in the field in order to have a crop for the next season

@bugoutfozzy remember a few things. Hurricanes, the heat and humidity can be almost intolerant, and there are pretty much only two seasons.... summer and winter. I have moved away from the Lake Charles area, and I do miss the food, some people, and the culture. Boudin is much easier to buy than make.

Every coonass has a different way of boiling crabs and crawfish. Definitely, Definitely, do not recommend adding seasoning after the boil. Put the seasoning in as it comes to a boil, let them soak till you like the taste.6 min boil 10 min soak. One small bottle of liquid crab boil, one bag of chahbay seasoning. 2 boxes of salt, one while boiling potatoes the other when you turn the fire off. Best crawfish you ever ate. From way down south Louisiana 60 miles south of New Orleans. We know seafood dude. Put that on some dip and eat. Dude!!
