Calvin "Carabine" Rabalais shows us how to make a squirrel stew (brown gravy) to put over rice. He also tells squirrel hunting stories and how he got the name "Carabine."

My Daddy was raised in Simmsport and hearing him talk reminds me so much of my grandpaw Mayeux. I grew up eating squirrels, but I haven't had any for a while. They sure look good though! Bon appetit!

I lived in Louisiana for half my life. I grew up eating Cajun & Creole food's. I loved it all i miss that food. I grew up eating squirrel my mom used to cook it for me & i loved it she made it in a pressure cooker & made it fricassee style. I could almost eat the bones it was so soft & tasty we also ate plenty of crawfish back then. I love Crawfish still. But in Florida It's getting too expensive now !!!

I stumbled across this video, I've heard of mr. Calvin. I live just 30 min from simesport. I'm in Marksville. You don't hear to many on this KZfaq that talk the French he is talking. We talk the same French.

My grandfather was in Korea, too. He was from New Iberia and he was in 1st Ranger Company in Korea. I wonder if they knew eachother!

He speaks English with a typical Southwestern accent. There is nothing foreigner about this. Regarding his French, Louisiana French is descended from the Napoleon era.
