Jacques Pépin is never boring and this diverse menu is full of gems (though we wouldn't necessarily eat them in the same meal!). He starts off with a fresh Vietnamese squid salad, followed by a Russian meatball recipe (similar to schnitzel) called bitochki. He rounds out the episode with a really cute cookie cone filled with fruit for dessert.

You can tell this was the late 80's or early 90's by how Jacques has to re-assure his viewers that the food isn't too unhealthy.

Authentic bitochki are sauteed in butter, never steamed nor is yogurt used - sour cream only! As a person of russian descent I cringe at this travesty!
