This is a video of cooking Timorese lamb Stew. The dish called Caldeirada is of Portuguese origin. The ingredients are at the end of the movie.

caldeirada is acutely a very simple dish and yet very delicious, but I must say my family is Portuguese Timorese and I have never seen it cooked this way, too much vegetable in this dish, I'm a chef myself but never would cook caldeirada like this, but again maybe we all have our own way of cooking this very simple dish.

In Filipinas, we have a similar dish too, and it's called "Caldereta" from Spanish influence.

Caldeirada is from Portugal and Galiza

I think so too, only here in the Philippines we usually use tomato paste or tomato sauce. I will try this version next time using fresh tomatoes.

ahaha. man, it looks like you're truly passionate about caldeirada. I feel for you, but don't you think that caldeirada is an international meal with hundreds of various recipes. I guess each family has its own unique one. and it's great. in my experience that caldeirada was neither ugly nor unappetizing. on the opposite it was great and all the guests enjoyed it. I repeat - it was not just OK, but really great in taste and smell. I am sure that lady in baucau is also capable of making good caldeirada and I'd love to try her variant of course. since I'm living in East Timor I am accepting invitations)). Cheers.

+The Don this is my dish, not yours, i cook like whatever and however i like it. The recipe of Kaldeirade is not written in stone you moron. It is stupid to treat food recipes like gospel, after all you don't know how delicious is this Kaldeirada of mine. FYI, i have 4566465937434686783454 ways of cooking kaldeirada!
