When my ogichan made sushi- he had to make do with our metal baking pans. I remember him fanning the rice & covering it with the cloth. He made the best sushi rice for sushi.

Love sushi... The best rice is the Koshihirari rice from Japan. So cool to see you using local ingredients. Learned Lot's from my friend Master Sushi Chef Hiroyuki Terada. Love this learning from our parents old school style is so meaningful. I love the way that you bring in your whole family to help. That's the best way to learn the true family recipes that made our families unique.

So glad that you share this recipes. I used to live in Hawaii from 2002 til 2009. And I really miss the poke. I used to work at Starbucks Sears Ala Moana. That's why I feel like I used to see your sister in law (Reid's sister) at our Starbucks branch,.

I do like wasabi. We used to use a flat round Japanese paper fan to cool the rice in the wooden bowl while we stirred the rice & vinegar mixture. Really enjoyed this video and thank you for the recipes!

Cari Taira, it was tasty! That's the way my grandmother used to do it so we always used a fan to cool the rice while stirring it.
