Hello, everyone! In this episode I show you how to make Ndole. Ndole is the traditional meal of the Douala people of Cameroon. It consists of blanched blended groundnuts, simmered with green leafy vegetables. It is oniony, hearty and nutty. It serves as a great side to boiled plantains, white yam and even rice. Enjoy!

Hello Precious, I am an elementary French teacher in the U.S., and I used your videos to make ndolé, cornchaff, and gateau. My students watched the videos, and we all ate the dishes at our school's International Festival. A native of Cameroon ate our Cameroonian dishes with us and was overjoyed! You take me way back to the early 1980s- I was in Douala a few times and ate Ndole (with plantains) and Miondo at Hotel Le Nde (not sure of the spelling now) - the best food I ever ate in a foreign country. Washed it all down with 33 Export - Cameroon rocks! Thanks for the video!!

One thing I enjoy about Cameroon cuisine is that you’re not afraid to use different starches for example fufu, gari, green plantain, potatoes, yam, even my tante use acorn squash.

Thanks for making this video! I didn't know I had to boil the bitter leaves and the spinach together! The way you mix it afterwards insures the two greens are well blended!

To me, the best ndolè is the balance between the bitterness of the leaves, the sweetness of the groundnuts soup(better if lightly browned ) and the flavour added by the shrimps and the meat. Finger licking video !!

Crayfish is the dried fish itself while crayfish seasoning is a crayfish flavoured seasoning cube (Maggi).

Fun fact, in Gabon we use ndoleh leaves for system cleansing. We purge with the soak water of the leaves thru the anus. Parents make sure they do it to the children after the long vacation just before they resume school. However those who can cook it eat it.

Hi T, the other leaf is called, "btterleaf". You can get it from an African store or from the African food isle of Asian stores.

I was thinking the same thing about the girls, especially your oldest daughter. I am starting to teach my 9 year old granddaughter to cook and it is a lot of fun. Hello precious, I'm trying to cook ndolè tonight and I could not find the djansang here in New Jersey to boil it with the ndolè leafs to reduce the bitterness, will the baking soda work the same?

Hi Rose Line, baking soda is perfect. We normally use "kanwa" (limestone) not "djansang".

Oh yes it is kanwa not djansang Since I left Cameroon for 2 years I'm confused 😂😅 Thx I will use baking soda and hopefully it will not taste as bitter as it tastes now. I'll let you know how it turned out! :)

Spinach is the equivalent of water leaf. Never heard of adding water leaf in ndole. Not criticizing, just surprised.

Is funny how African dishes are so similar, Ndole is like Nigeria groundnut soup but the difference is that the nut is roasted before use. This looks delicious too, I will try with raw groundnuts. Thanks for sharing.

Nope it'd different from pnut soup in Nigeria. Totally different. I have eaten your pnut soup and there isn't any similarities in taste whatsoever

I would say your pnut soup taste a little similar to our pnut soup. We fry the gnuts too(that's mandatory) but we don't put spinish or ugu in our pnut soup. We use basil, parsley and Celery instead (most people would blend it so you may not even notice it has greens) and we use vegetable oil not palm oil

hello, can I just use frozen spinach instead that and the bitter leaf? I loved ndole the very first time I tried it. thank you. if you can reply as soon as possible. want to cook it this weekend

Thanks for sharing.You never disappoint us with your cooking.i have one question.How do i easily peel off the skin from the groundnuts?That is what has been pulling be back from trying to cook ndole.Please help

Hi Kwec, I normally buy already peeled groundnuts so I do not have to go through the fuss of peeling them. Where are you based? Depending on where you are, you could buy groundnuts that have been peeled.

warm the groundnuts in a dry pan on the fire (don't fry to cook) and then cool it and peeling becomes easy.
