Camping food ideas. Pork Tacos with Fresh Pico de Gallo and avocado - camping edition
Ingredients: (Enough to feed a hungry camping crew)
Marinated pork ( tenderloin or boneless pork chops ) - 1 lb
For marinade:
1/4 cup (60 ml) lime juice
2 tablespoons (30 ml) olive oil
2 cloves garlic, minced
Chili powder - 1 tsp
1 teaspoon ground cumin
1 teaspoon paprika
1/2 teaspoon dried oregano
Salt and pepper, to taste
Corn tortillas
Oil for frying
Pico de Gallo:
Red onion - 1 ( chopped )
Lime juice and zest - 1 lime
Olive oil - 2 tbsp
Jalapeno - 1 ( chopped )
Garlic - 4 cloves ( minced )
Parsley - 4 springs ( chopped )
Scallions - 2 sprigs ( chopped )
Salt & Pepper - to taste
Toppings: avocado ( or guacamole ), chopped parsley & sour cream
Equipment:

Preparation steps:
The night before your camping trip, put on your chef hat and marinate the pork. In a small bowl, combine the lime juice, olive oil, minced garlic, cumin, chili powder, paprika, dried oregano, salt, and pepper. Give it a good mix. Place the chopped pork tenderloin in a shallow dish or resealable plastic bag and pour the marinade over them, ensuring they are coated evenly. Marinate the pork in the refrigerator for at least 1 hour, or preferably overnight to let those flavors mingle like happy campers around the fire.
Now, it's time to make fresh Pico de Gallo, the salsa that will make your taste buds sing campfire songs. Combine all the ingredients above and set it aside for taco glory.
In your trusty outdoor stove, heat up some oil and let the pork sizzle. Cook it for about 10-12 minutes or until it reaches an internal temperature of 145°F (63°C). I am using a cast iron skillet made by GSI Outdoors because camping is all about embracing the rugged cookware life.
Warm up those tortillas. Let them soak up the leftover meat juice and get all toasty. If you don't have another dish, get creative and use a lid from a cast iron skillet to warm up your tortillas.
Now comes the fun part. Assemble your tacos with love. Fill those tortillas with some Pico de Gallo, the grilled pork, slices of avocado, a squeeze of lime juice, a sprinkle of fresh parsley, and a dollop of sour cream. Voila! You've got yourself some epic camping tacos that will make you a legend around the campfire.
