They aren't meant to be practical combat practice, Their main two purposes are to build gross motor skills and muscle memory, while also acting as a meditative tool, by forcing you to do very specific repeated motions with a heavy focus on exact placement and breath control. In a nutshell, they are a less boring way to drill basic skills and footwork, while also helping you focus on your mental state as well.
