I work on a commercial fishing vessel and that sucker on its head will rip your fucking skin off if you stick it to your body! Fucking thought I was gonna die that damn thing had me bleeding for an hour!

Martin Rumbold depends what you consider knife skills...I'd rather watch butchers deconstruct whole animals/fish opposed to sushi chefs. Like sure they cut it thin and fast etc but what they cut is basically just jelly...watch a Burch speed deconstruct a whole pig or cow etc that's real knife skill not thinly slicing boneless jelly like meat and veg...not to mention sushi chefs have been doing it for like 10 years...If I was cutting the same boneless piece of jelly I'd get pretty good and thin slices to where as every animal you deconstruct is always slightly different.

I have been eating fish from the Atlantic and Intracoastal in FL for my whole life, I wasn't even allowed to fillet a fish until I was an adult. It was considered wasteful. We cooked and ate them whole, blood line and all. Still here 50+ years later. Just sayin'

Hey man! Never EVER heard of your egg+mayo wash. Mayo with egg wash?? pfff! but I tried it with whiting and it was amazing. I then tried it with dijon mustard and cracked s&p and it was superb. Allen Jollie. Mayo only has the yolks. Adding a whole egg creates a wonderful binding agent. Give it a try like Rick Spence just did.

Great video. I think I may have stumbled onto the ultimate trash fish or treasure challange after moving to the Republic of the Philippine Islands five years ago. I am inland a few klicks so no salt water fishing close by. In the local canals where I know most westerners would NOT want to drop a line, there is a critter called a JANITOR FISH. All most every Filipino tells me "We don't eat those." These bad boys look like an armour-plated catfish. Strangely, my wife's uncle says they are good if you know how to get past cleaning them and know the correct way to cook the meat. Now, if only I could find a canal that was, in my opinion, clean enough to fish in, we could catch, cook and file a report! Good fishing to you all.

NewHampshire Jack dude if a Filipino says about a fish "we don't eat them" its probably not really fit to eat. I've seen asian fellas from the philipines, south east asia, etc. eat damn near anything thats swims. i do alot of catch and release, and the asian guys look at me like I've grown a second head when i throw fish back. especially back when i fished in the SF bay (i dont eat ANYTHING out of the bay)

stinkyfungus, copy that and I must agree with you 99%. My small 1% thought is the ugly janitor fish might be OK if it was snagged out of clean water. Who knows, the flesh may be super. My problem with them is that ALL the fish I have seen live in canals that nothing else can or does survive in. Runoff from roads and hospitals, partially digested sewage, no leach fields in the subdivisions or commercial buildings after the effluent leaves your septic tank, straight to a canal. There are squatters along the banks of the canals that have, you guessed it, NO SEPTIC TANK at all. I eat NO fresh water fish or prawns here EVER, not even from fish farms. Only ocean fish for my family. OH, and I agree on fish near the coastline also, NOTHING and I mean NOTHING from Manila bay or any place like that. The Pasig river empties into Manila Bay, I think it should be a superfund site but we do not have such here.

NewHampshire Jack The thing with Janitor fish is the stigma of them invading our canals. Where they are probably too contaminated and can make you really sick. But other than that clean Janitor fish are food in the Philippines. Athough for some reason Janitor fish in the wild prefers to live, even prosper in contaminated waters.

In the province people eat them. I have also seen some people catching Tilapia near the Baclaran church. It's not recommended to be eaten due to the metal content it has from living in the contaminated canal. If you can find them in a clean environment go ahead.

Well maybe with the new administration in DC, the Federal Bureaucrats will stop this insane ban on recreational harvest of Red Snapper and we can do some videos on cooking them. They are thick all along the FL coast. Some places, they are the only species you can catch.

i know that this is a common theme in this comments section, but some advice i can give with personal experience is try investing in a steel mesh butcher's glove... itll definitely save you some trips to the ER. i had a tough time filleting a fish like that once and quickly regretted it.

I have used them. Misplaced my last one. A lot of this was caused by me trying to maintain a camera angle, a dull knife and a triangular shape of the fish. You cant lay them flat.

Most animals are edible. From lampreys to some jellyfish, from nutria to snapping turtle... Its just that in modern culture we forgot about the fact that we user to eat everything that wouldn't kill is, and some things that would. I have a constant debate about the difference between "inedible" and poisonous. Something that is inedible is just generally impreferable, but plenty good enough like crab apples...I love them. But poisonous or toxic? Of coarse you can't eat that.

If you have your audio settings on your device set for music emphasis it will do that. We edit all of our videos with headphones and set audio levels for quiet background levels. Your device may over-ride that.

Martin Belfast You are in the minority. I have left music out of my videos in the past and get many more complaints. See my comment above. If you listen to music on your I-phone a lot, your device with emphasis music. I cant control that.

frank petersen JR It's really a shame how much fish is wasted in the mass fishing industry because they are considered trash fish. Would definately be an improvement if more people knew that "trash fish" is almost made up. I believe even lobsters used to be considered peasant food.

I remember one time talking to an old man who was eating Yellow suckers here where I live, something almost no one does because of the bones. I asked him how he could eat it, and as he told me, as long as there's meat and it isn't poisonous, it's edible. My grandmother had a very old cookbook with things in it that would make the average person today probably heave, including Robin's breast pie, pigeon pie, raccoon and a whole lot of other things such as that.

Funny you mention that as I used to go out back with the BB gun in my younger days and shoot robin..legal and free game of course where I'm from. I'd take those little breasts and pan fry em with some seasoning. Friends used to always turn it down and say that's disgusting and I'll catch a disease. Never once got sick and some darn good eating at that. Salt pepper and a little olive oil a milk bath if you really want to I guess. Simple and tasty.

I love the concept of "trash fish". People around here, panhandle, always call the Sailcats trash; but I've made some damn good meals with those suckers. Yeah they smell horrible when you're cleaning them, but if you know what you're doing in a kitchen that meat is as good as any "fresh" fish you'll buy at the store......def not as good as a Red you just pulled out of the water though lol.
