Max's Restaurant's beginnings started in 1945, after World War II. Maximo Gimenez, a Stanford - educated teacher, befriended the American occupation troops stationed at Quezon City. Because of this friendship, the soldiers regularly visited Maximo's nearby home for a drink or two. Later on, the troops insisted that they pay for their drinks. This prompted Maximo to open a cafe, where the troops could enjoy food and drinks.
The cafe initially served chicken, steak and drinks. Maximo's niece, Ruby, who managed the kitchen, created a special recipe for chicken that became an instant favorite for the GIs. Soon, the Filipino public heard about the delicious chicken - tender, juicy and crispy - and they came too! Max's Restaurant was born.
Over the years, Max's Restaurant's popularity grew and it became known as "The House That Fried Chicken Built." Max's Restaurant has established itself as a household name in the Philippines, an institution, and a proud Filipino tradition. The second and third generations of the family continue to zealously uphold the standards and traditions set by Maximo and Ruby for all Max's Restaurants. Now a global brand, Max's Restaurant serves real, authentic Philippine cuisine at over 180 locations in the Philippines, 4 in the Middle East, and 21 in North America.

Oh no ! Shrimp paste is supposed to be for Kate-Kate if you wanna add taste to the Kate-kare. Lol The red sweet sour sauce is for the Lumpia Shanghai. Not sure about the green sauce either, but if it smells & taste like vinegar, then it’s a dipping sauce for the pork bbque. Hope you visit the Philippines one day, and try all the Filipino foods & street foods . And experience the culture itself.

A former co-worker brought some lumpia to work one day and I was absolutely hooked. His wife gave me a detailed recipe and I still have it 15 years later. Very good stuff and I love it dipped in sour cream! That grilled pork look amazing too! I might try to find that dish around me! Yea your stomach is going crazy in this video! I kept giggling every time it did lol.

If you're in the North York area, try one of the Filipino lechon joints. Lechon Republik or Wilson's Haus of Lechon. They specialize in traditional slow-roast lechon (suckling pig). A must try with liver sauce and ask for crunchy skin.

Filipino dipping sauces and condiments are for adjusting the food to the eater’s taste. The fermented shrimp paste is to adjust the saltiness of Kare-Kare to your liking, usually a little dab with each bite. It’s about contrasting the creamy sweetness of peanut with the salty umami of the paste. The leche flan is Spanish colonial influence, with many Latin American countries having a local version.

First dip is for lumpia, 2nd dip for the bbq skewer, 3rd dip is for kare kare (this will give saltiness to the dish because the dish is usually bland, no salt added), best pair with rice. The Max fried chicken is also a must try, it's a different fried chicken, no breading.

The 1st sauce you tasted is for the lumpia. That's the sweet and sour sauce. Bit spicy, sweet and a bit sour. The 2nd one is a vinegar blend. It usually comes with onions, cucumber, and pepper. That is for the skewer or "Barbeque" in the PH. Lastly the red paste is a shrimp paste. It's for the Kare kare. Bit spicy, super salty and a bit sweet.

I think you should definitely try, sinigang (savory and sour pork soup), our godly adobo (every version has their own unique taste), and our sisig which is an all time dish

You should visit the Philippines soon. Many more good foods to taste. And learn the fun way on how we eat our food, fun but has sense. 😉😊

Try the lumpiang sariwa or fresh lumpia next time. Goldilocks sells them. Steamed lapu-lapu is also good and try sinigang if you want something sour.

We have some good friends that are Filipino..... See if you can get invited to someone's house for a party. The food is plentiful with a great variety. Lumpia is always on the menu. Also see if you can find a restaurant that serves a mix of different foods on banana leaves. It's usually eaten by hand an is delightful. I wish I knew the names for you but I rely on my friends for everything and don't remember all the names. Lumpia, adobo and lechon are big hits though! I hope you go to the Philippines, I'd love to see that video. 🤗💞

Kare-kare is best enjoyed with white rice. Try that next time Ken. And if you can, def try sisig. There is a good mom n pop filipino resto called cabalen in north york i think. You should check it out.
