Homesteading with the Zimmermans

Our family isn't a big fan of sour kraut so this is how we preserve most of our cabbage.

Recipe:
1 medium head cabbage
1 med onion
1 red pepper (any color works)
1 large carrot
Wash and grate all veggies, mix veggies together with 1-2 tsp salt. let set in refrigerator fir 3-8 hours.
After 3-8 hours drain veggies thoroughly.
Pack into pint jars.
boil together to make a brine:
1 cup vinegar
1.5 cups sugar
1 tsp celery seed (optional)
1 tsp mustard seed (optional)
Pour vinegar mixture into jars with the cabbage, stir well to release any air and add more brine if needed to bring contents to 1 inch head space.
Wipe rims, add lids and rings, hot water bath for 15 min.
after jars are cool, remove rings and store.
After a month the flavor has settled in and you will be most pleased!

Your parenting skills are amazing. I never see you get upset, you are so patient ❤️❤️❤️ I think I have watched everyone of your videos and love them all. I was raised in foster homes from 6 grade on, my last home she did a lot of homemade (not as much as you) such a good cook. (I even called her mom). Always hold your head high!!!

I have learned so much from you! While watching one of your videos you said someone called you uneducated and you agreed because you only attended school to 8th grade. I completely disagree!! I attended college and was an A student throughout college but I didn’t know half of what you do about many subjects. Being “educated” doesn’t make a person Smart!! I just love you and your family and appreciate your teachings so much!

Your my favorite homesteader. You’re so real. I can tell that your lifestyle has been your way of life. That’s why I like it so much because I grew up much the same way. I grew up milking cows raising hogs for meat. My dad actually free ranged his hogs and would gather them at certain times of the year. Anyway I love your channel. And I have shared it with so many people. Thank you!

I am so tickled by the way you and your children interact. Seeing the “Little Boys” and how they help you so much is wonderful. I remember putting on my apron and putting my grandsons in their aprons so they could help me when I was cooking, mostly baking. They would sit on my lap while I was sitting at my embroidery sewing machine and let them push the buttons. They would look up at me and say “Now?” They were so excited to help me push buttons and slide the fabric under the presser foot. It was so wonderful! God was moving thru me even tho I was at that time practicing the worship of God, the Father. It has taken me time but now the boys are almost 18, 16, 13, 8, and 7. All boys plus three step-granddaughters that have no steps between me and them. My 4 year old granddaughter was diagnosed with ALL LEUKEMIA just 3 weeks ago. I am asking your followers to please pray for Merryn. She and the family are struggling at this time. We need all the support we can get thru God and ask for a total healing of this beautiful little girl. She has a big sister, 8 years old and they are very close. This is hard on Eleanor so I ask you to pray for her also. I pray that God will hear our prayers and thank you in advance for your kindness. We have not met but I still consider you a good friend, like so many others who watch you. May God Bless you and your family with good health and happiness.

Very cool. I’ve never had it with mayo. We usually use sour cream. Thanks for your videos. Your family will always have these to look back on. I wish my Grandmas and my mom would have had videos. Many old family recipes get lost and forgotten over the years, your family will never have that problem along with the world.

I steam can my pickled vegtables . Timing is this same as water bath but less water and not as heavy to work with .

I have been canning for about 4 years I thought the water had to be 1 to 2 inches above the jar lids for water bath canning the coleslaw looks wonderful

Mandie - yes, it does need to be 1 inch above the jars when you process according to food safety experts:)

She's said in a previous video that this is how the Mennonite community cans and she continues that practice. She is aware of current canning policies but has chosen to continue the Mennonite practice.

Oh this is a recipe we will try. My mom made kraut and my husband now makes his own in a quart. Just cabbage and salt. We don’t can it just eat it. I love this color of slaw! My mom also had a Cole slaw freezer recipe

This is living the life. You must feel so blessed. We have a crop of more cabbage than our neighbor and we can eat. I thought I’d give canning some a try. I love this method you’ve shared. So glad to have found you.

I made a batch of this slaw about two weeks ago. I’m happy to say we loved the slaw. Went to the store yesterday and now I’m making a double batch of this slaw. Our whole family loves this recipe. Thank you, Ruth!! I’m really enjoying your channel.

I absolutely love that shredder. I also own a Bosch Universal mixer and they make a slicer/shredder accessory for that machine. I know you said you didn't need another machine on your counter but the accessory works with the mixer you already own. So you wouldn't need to have another machine sitting on your counter. A day in your shoes wears me out just watching let alone having the energy you do.

We just opened a jar of your coleslaw recipe I canned in October. It is so good. We usually have creamy slaw but when we tasted this, we ate it right out of the jar. So I just wanted to thank you for sharing this recipe & I'm so happy I made it! Good bye creamy slaw, HELLO new favorite!

I watched another video and she said if you occasionally want the creamy coleslaw, just rinse it, let dry before adding the creamy dressing. I haven't tried it yet but sounds reasonable to me. Love Options 😊

You can put a kitchen towel in the bottom of your WB canner to protect the glass from the hot bottom. Really enjoyed your video's. Thank you for a great recipe.

LOL... "I just want to slam it (the fresh picked cabbage) on the ground" ! My mom had one of those table top hand cranked shredders - another item from her kitchen that I wish I had kept and not donated it to GoodWill : ( This recipe and the canning looks easy to do. Thank you for this video!

This was our first year growing cabbage and while it wasn't a great crop, we've been loving coleslaw and are planning a fall crop. I'm excited to try this recipe!!

Just a tip, if you want to you can just lay a folded towel on the bottom of your canner to hold the jars up a bit and cushion them.

I will try this coleslaw. It looked easy and delicious. I have only ever made cole slaw from fresh, but having this on the shelf sounds delightful.

That is so nice you are able to do some of your canning outside. I love to watch the young boys helping you. I gave up canning as I have corpal tunnel in both hands. That pickled cabbage would be great on sandwiches. YES God is very good. Blessings

You are raising a wonderful family. Your recipes and demonstrations are helping a lot of folks. I starting changing some of the older practices of the past by using glass or stainless for hot or acidic. I use a stainless ladle to put hot vinegar in the jars. The plastic leaches unhealthy bpas, etc when heated.

I love pickled cabbage! Ate it for the first time last year. I hope to make more soon. I'll have to try your recipe, looks so good! You could staple some netting on the wooden shelf that's open in the back, that way it would have a little give but hold the jars too. I would staple each section separately for more strength.
