Cold pack with raw meat is the most simple way to preserve meat for the pantry. My simple recipe is based on Tushonka (canned meat) that I grew up in the old USSR. Not a single Russian family went without relying on Tushonka.
My recipe is super simple:
1. Meat- any meat, raw, cut into cubes
2. Bay leaf, on the bottom of each jar
3. Salt, 1/2 ts for pints and 1 ts for each quart
4. Black Pepper to taste.
5. a splash of water, really not necessary.
Processing time- 75 min for pints and 90 min for quarts at 10 lb pressure ( my elevation).

Wonderful quick recap. I haven’t canned meat for 2 years and I wanted to make sure I remembered everything to get all of my supplies ready before started. Excellent job. I loved that you shared your Soviet Union experiences as well. We don’t know how good we have it.

I am happy to share. Meat is getting to be very expensive now, at least it's available on the market shelves, unlike the old soviet union days...

You’re so right. We’re feeling grateful we bought a cow a year and a half ago. Prices have sky rocketed. Unfortunately our freezer broke. But THANKFULLY, praise be to God, we found it before it was totally defrosted so I’m canning up meat like a crazy person. It feels like a shame to cut up steak and put it in jars 😂

If done correctly like they way you have prepared and cooked the meat what is the shelf life of the meat when stored in a cool dry place ? Cheers 🥂 from Australia.

Watched this from Australia. Really enjoyed your video. I don't have a pressure canner yet, just a fruit canner which I do use. Loved your stories about your childhood. We all have to do what ever we can to eat, back then & now again.

I learn something new with every one of your videos. And I am old! ha ha. Next time that I cook pork, I will add a bay leaf. I use it for chicken and beef, but never pork. This reminds me (and this is true), of my mother on her deathbed asking how I knew, as a child, when she made rabbit stew and called it chicken, that it was rabbit. She had wondered for 55 years. I told her that she always put bay leaf in with rabbit and never with chicken. She nodded her head weakly, and said "Yes, that's what I did."

I just canned Turkey broth for the first time. Well now I'll be canning some pork. I was able to get free pumpkins so I will can them as well. My daughter got a lot. I told her that I'll bring my canner so we can can them. I might make a canner out of her yet. Take care. And Thank you.

Thank you for your gracious gift and sharing it. I liked the cat hello as well. :) I am blessed by friends who are loaning me their canner. I am more confident now that I watched your video! I am not easy to teach ( I have some challenges) I think we all do just as we have gifts.. I will let you know soon how my meat / pork and / chicken canning goes. Is it the same with poultry / wild game/ and fish?

Thank you so much, darlin'. My Polish granny would be proud of me for starting a sourdough starter, making my own kraut, and now! Finally, pressure canning! I've water bath canned tomatoes off and on my whole life, but I can't wait to REALLY start putting good food on the shelves and in my family's tummy! I've always thought of myself as a really good cook, but at 48 years old, I'm finally adding all those pioneering skills that flow through my blood! It really feels good to "get back to the basics" of living a good and healthy life! Sometimes, the modern ways aren't all they've cracked up to be, eh? Thank YOU! I am about to host a seminar in Nigeria on how to can meats cause most of the time they don't have electricity the grid is so bad you can go weeks without electric then have it for one day then it's off for weeks again most people either buy their food daily or end up eating tanted meat that has been cooked and just stored in the not working fridge even up to 3 days and let me tell you it's gross I have been here for 6 months and then I thought to tell my husband you know we could preserve the meat in this way then you don't have to walk to the market daily so he has spread the word and now the town is hosting a similar for me to teach people how to do this ❤❤❤

Just canned some pork for the first time a couple days ago. Freezer went out so needed to can some meat. Mostly chicken and some ground beef but had pork as well. Didn’t think about the bay leaf. Will try that next time. Have missed your videos!

True about the vinegar if I don’t put it in the canner my jars have a white haze on them. We have hard water.

vinegar in the water does keep everything nice and clean but will rust your lids :)

Thank you for the tip. I haven't observed that with my lids. I have some jars from 2017 no rust.

I add a little vinegar too because we have hard well water. My lids don't get rusty unless I leave rings on

How long is canned meat shelf stable/safe to eat?

Is it only finger tight on lids before putting in the canner? I tend to want to over tighten everything in my garage plenty tight but wasn't sure about the lids on these jars for canning.

These kind of lids require only finger tight. They seal while processing.

Is the canning bad if I pressure canned drumsticks with no water and it did not create enough water to cover the meat?

Canned meat is not always gets covered with liquid. Still not bad. If the seal is good, and you followed processing times correctly.

White chicken meat may be dry on it's own. I would add a little broth or fat.

I was afraid of canning meat when I was younger, but over time I've experienced increasing prices and decided to learn. Plus, I have memories of eating "toshonka" canned pork meat when I was a child back in the old USSR. It is not very complicated. Just must follow the directions of pressure canning.
