We have a lot of oranges. A LOT. We've made curd, marmalade, marinades and even wine. But we still have a lot left. We'd read about canning orange juice to preserve the harvest but didn't know what it would taste like after months on a shelf. So, we decided to find out.

Try adding a little of the zest in when you boil the juice. Just a few slices. Then strain out. It will give it a more rounded orange flavour.

Another reason to whipe the jar with vinegar is to make sure there is no juice residue of the juice. It is imperitive that the glass is clean in order for the lids stick when processed.

A great experiment that worked out well for you for a year's worth of orange 🍊 juice... A great saving all round. Now to find a perfect place to store heaps of orange 🍊 juice in hundreds of small jars... 👍🙂😎🌞

My grandmother would buy a huge load of oranges when they were at their cheapest or on sale. I lugged a few sacks of oranges from the grocery stores myself when we went for visits. I don’t know how she did it but I’d imagine it would be similar to what you did. But she would freeze hers and added water to make “fresh” OJ anytime of the year. When I got older and found out that you could get frozen OJ in a can, I wondered why she went through all that trouble. That was until I bought one; Gran’s tasted better.

I can orange juice in liter and half liter jars and some half liter bottles. I found out that it is best to strain the juice if you have a lot of bits in there. It ends up on the top layer of the pot of juice and you end with an uneven mix of juice and bits. The bits I then dry in the dehydrator. I also freeze a lot in small bottles. It has a slightly more bitter, sharp less sweet taste depending on the type of oranges. It works for me anyhow as I like tart drinks.

Thank you for the vid. So thats how you do pasteurised oranges. However the comments are super. If everyone did a video and then compared to a commerical orange production process, I would be watching oranges for a long time. That said the proof is in the taste. Great way to start a day off. Better way to finish a night. Thanks again for sharing..

You can get a "thing" to pick up the lids from the hot water. I think it has a magnet on the bottom and I've seen it on various You Tube videos...saves on burned fingers.

Try to make pasteurization simple. I boil juice and pour it into a hot rinsed jam jar. Immediately turn the lid on and place the jar upside down on a towel. After an hour, put jars upright and check whether lids are hollow. Finished.

Yum! Not sure if you are into sweeter stuff but fruit leathers, sugar glazing slices (dehydrating). You can also save peels for tea or make zest for recipes/baking. Yum

I've never really thought about canning orange juice, as I'm from the Midwest USA. I did go to 2 years of college near Tampa, FL and remember, on trips around Florida, smelling the smell of orange & lemon production when driving by the groves & juice factories. It seemed amazing at the time, plus the smell of the flowers. The air was alive with orange and lemon smells.

Oh this is my dream. Try spicy juice with clover, cinnamon and cardamon! I would definitely experiment with marmalade and all sorts of spreads. Also candied orange peel is very tasty! I know you said it’s not your thing, but maybe for friends or some future business ideas? Those citrus trees are a blessing! Looking forward to next videos, I’m so happy you keep going and enjoying what you do.

I’ve just recently found a much better way ... juiced, cold packed in jars, then water bathed at 60C for 30mins (did lots of research about pasteurisation after some of the other comments). Easier and tastes much better, almost like fresh juice (and no doubt has more vitamins)

Was told to dehydrate the peelings and make powdered zests for baking, and cooking. Ordered a solar dehydrator from Amazon. Looking forward to its arrival. Did put it in stocking and hang dried. Also dehydrated it in my electric dehydrator. Have not made the orange chicken stir fry yet

Just for fun we dehydrated orange slices and boy were they good, it concentrated the flavor and is my new favorite.

What I miss since the late '80's is canned concentrated, frozen orange juice used in all sorts of cooking situations. Perfect, with water reconstituted orange 🍊 taste. Especially ideal for drinks and cocktails 🍸. The cans were small and convenient to store and stored for ages. It was difficult to tell it wasn't freshly juiced. I can't remember the Brand name. I wonder if you could dehydrate the oranges. Powdered Orange juice.

You can freeze orange juice and concentrate with pasurising add water back In later when want to drink unfreeze.

I saw a show once years ago about commercial orange juice from Florida. It kinda made me feel sick because they talked about putting it in vats and stored really long periods. I don't fully remember the details.. I'm glad yours are doing well. !! Can all your beautiful oranges !!!! Good luck 💕💕

To be honest won't know till u try. Folks now days can anything that fits, from meats, dry freeze etc. Yr extras might help with animals when and if u decide. Or and have a Farmstand sale and give back to the community. 🤙

Nice experiment and you get to drink it. Freeze dried slushies could be the way to go and they last forever and can be sold online. All that compost could be made in fuel. OK I know you have a lot to do already thanks for sharing.

Ha ha, yes many things on our plate. We have looked at a freeze dryer, and an automatic juicer .... will probably invest in both when we’ve built our processing kitchen 😀. And after peeling 50 oranges this morning (to dehydrate and make orange powder) I’m wondering if there’s a machine that can do that too ... peeling cramp is very real 😂

Great video! I have watched a few about canning but, get overwhelmed with all the 'need to buy equipment' which I can't find easily here. You made it simple using everyday equipment. Thank you....Maybe some sun drying food stuff later? I have an abundance of that here.😀

We always try to do our initial experiments with whatever we have .... to make sure it works and that we like the results. Since filming the video we’ve invested in a bigger electric water bather that can do more jars at once and also some different jars. Tested these today, just waiting for the jars to cool down 😀

May I suggest to buy a freezer and freeze the juice and used it on the time when you don't have fruits available. God Bless and Love from Canada! Love what you did with your property!

There’s no freezer big enough to store the amount of juice we have available... and we currently don’t have enough solar setup to run a freezer

Wiping the rim of the jar is to make sure nothing got on the rim that would keep the jars from sealing.

💕Have you tried orange sorbet💕Squeeze freeze stir every hour until it crystallises then leave to freeze until your ready to eat it💕

What a great idea, can your own juice to use when the oranges are not in season. I hope that you are able to can in litre or more quantities, those small jars are hard to store and not even one drink.

If you let the juice settle, skim off the watery, less concentrated portion, then can it, you will have concentrated o.j.! You are able to either can or freeze the concentrate. You will have to experiment with the reconstitution of it, or just keep a record of how much water you skim off, divide that by the number of jars you make, and use that amount to reconstitute . Enjoy!

I water bath canned a few gallons of orange juice a few weeks ago. Same method, essentially. I did strain out the pulp. I pasteurized the juice (heated to 190f for 5 minutes). Then water bathed. I’ve opened some and it was wonderful. The canning does kill the enzymes and vitamin C, but not the vitamin A. I didn’t want to see the oranges go to waste and will use the juice. I still prefer fresh squeezed, of course.

I’m hoping to do another experiment this week, at a lower temperature. A little bit of research suggests that a cold pack, then water bathing at 60C for 30 mins will also work. I’d be much happier if that works, less work and hopefully more retained goodness

If you’ve got freezer space you can freeze bottle of fresh juice. It tastes great once thawed and lasts as long in fridge as fresh squeezed after thawing.

We don’t have a freezer unfortunately... and freezing isn’t really a scalable option when you have thousands of oranges. Would like to try making a concentrate and either canning or freezing that

I have found that the deep orange zest when ground together with sugar makes an orange drink very similar in flavor to orange soda.

Different oranges have different juice qualities I believe valencia orange juice stores for a long time comparatively without bittering and nearly all commercial juice is made from them. Also some orange varieties will stay fresh on the tree for extended periods of time allowing you to have fresh oranges most of the year round meaning you don't have to rush to preserve when you have a glut like some more traditional varieties.

I think the hot water bath is a good way to go. I do believe the juice can be good up to 18 mo depending upon your storage facilities. Tropicana probably does a similar process. You can also freeze dry orange juice. 🍊

Canning videos I’ve watched of homesteading you tubers usually say they are wiping the jar rims with vinegar to remove food particles which will prevent a proper seal.

Not really an issue when using lug lids, but is a consideration with the US style 2-part rings. Also if you’re pouring from a jug you’re much less likely to get anything on the rim

I’ve subsequently changed to using an electric canner .... 65C degrees for 30 minutes, and the taste is much better

​@@MAKEDOGROW May I ask, is this your whole process? Or do you pasturise first? I just made some shelf stable OJ using a Fowler's Vacola unit and the juice didn't taste so good after pasturising... Fresh it was lovely, but after processing it was quite bitter and the taste had significantly changed. With this updated method, do you place the filled jars/bottles in the water bath canner and then bring it up to 65 degrees (and keep at 65 degrees for 20-30 mins) or do you put the jars straight into the canner that is already at 65 degrees?

I have the experience that when I press the orange too far, ie down to the white membrane, my juice is much more bitter than when I make sure that the membrane is not touched during the pressing. Because we really enjoy duck breast fillet with orange sauce, I found out myself by pressing it myself, but in the wrong way. After I had done a new pressing in the right way, my sauce was delicious. 1.5L was then reduced to 0.5L, so that all flavors present became more concentrated. I think there were very empty peel halves on your waste mountain, although I could have been wrong of course. Since you have a very large amount of oranges, you might try juicing a little less powerful to make sure the zest hasn't added any extra flavor to the juice, is my penny here. 😅😎

Squeeze. Jars. Freezer. Done. No fannying around boiling and spoiling. Tastes as delish six months or more later as the day it was frozen.

Micro organisms eat the sugars in fresh unpasteurized juice try pasteurizing your fresh juice it should last in the fridge or I'd just keep canning it, nice job😊

Pasturizing the juice kills the enzymes and it looses most of its food value. Still better than nothing, I suppose. If you could afford a freeze drier (quite expensive though, few thousands of $$$), it would preserve it as fresh and you could keep it as powder for many years. Really great method gaining popularity now.

By heating it in a pot first, then pouring it in jars which cools it, then reheating it again, it seems like you had a lot of heating, reheating and oxygen exposure. If you "cold pack it" as in the case of oranges, put room temperature juice directly into jars, and into an already quite warm pot of water (you can have a 30 degree or so difference between jar and canning pot no problem, just not ice cold straight into very hot water)... you would avoid a lot of that. Maybe it would improve the product even more? Also, you really don't need to leave the jars in the pot an extra 5 minutes, its another step that is unnessecary and might overcook it. Just take them straight out onto the towel. Also I'm curious how the juice tasted maybe a couple of months or so later?

The canning process will cause the complex sugars to break down into simpler versions. The enzymes contained in the juice will also become inactive after heating. Juice concentrators and milk condensers will often concentrate under vacuum. The boiling point of the liquid is lowered from near 100 C to around 55 to 60 C. Much kinder to the sugars and other goings on inside the juice. Chilling before you break the seal, on your canning jar, will help preserve the freshness...but only a bit. Have you tried drying or dehydrating your oranges as an alternative use? I've seen plans for solar dehydrators online and on KZfaq. Just a thought. BTW...Pennsylvania just had its first day above 21 C.....So jealous of you guys!!!!

One day we’ll invest in a freeze dryer, think that’s probably our most affordable option for better preserving. We do also dehydrate peel and slices (Kylie did 50 oranges worth of peel today). Wine still seems to be the most effective way of using up the large quantity of fruit that we have 😂

I don't know for sure but in a random Reddit thread online (in Portuguese), someone said their previous name was already registered to someone else. So I think they were forced to rebrand for legal reasons. I like their new name better anyway 😊

You can take the orange peel without white pith dry and candy and preserve. Also you can actually can the actual fruit.

Good question. I am a home etc teacher and my students have just done this for a prac - lesson learned - heat kills vit C unfortunately. The students came up with alternative of freezing oranges until you want to eat them. You can either peel and freeze, then turn them into a slushy - delish !! Or freeze with skin on, defrost and either juice or, slice and eat. It is better for your health to consume the pulp of the orange as it contains soluble and non soluble fibre, preventing your gut from absorbing too much sugar from the juice.

Heating definitely reduces the vitamins etc, but not all of them. If you’re looking to maximise on the bits, freezing is probably better (but then you have to have the freezer space)

The next thing I have to solve is what to do with all the pulp left over from juicing - thinking I’ll experiment with some kind of pressed and dehydrated slices, something like a fruit jerky. I peeled 50 oranges today to also make use of the peel, very time consuming unfortunately, so need to find something else we can use the skins for 😀

I was taught you should do only finger tightness for lids with water bath canning, but perhaps the seal is different with those lids.

Yep, that’s the advice for the 2 part lids, lug lids are different. There was one we didn’t tighten enough and it didn’t seal (was great in a cocktail the following day though) 😂

Interesting experiment. Our fresh stuff is fantastic, we use the excess for marmalade. You have way more trees than us and this year has been a great harvest, at least around here.

I would never have thought of canning orange juice! I don’t do much canning but … did you know there is a handy tool to get the lids out of the boiling water and save your fingers from getting scalded: it’s a small magnet attached to a plastic wand. Having seen your DIY habits, you’ll probably just glue a magnet onto a wooden dowel!

I wasn't really a marmalade person either, even though I grew up making marmalade with my Mum, using shop bought Seville oranges. Here in Japan there are loads of citrus trees, specially on older properties that have gardens, or anywhere up-country. When I was given a huge bag of 'jabara' that the owner said made so-so marmalade, I found I liked it much more if I peeled only the orange part of the rind, discarded all the pith, made the jam as normal, and added the squeezed juice at the end. It was loads nicer, and didn't have that slighty yucky smell as the pith cooked. There's no point making it if you don't like eating it, but I found this way, I've really come to enjoy it more, and the flavour is much more intense. I also wonder if there aren't some homeless charities/foodbanks in Lisbon that might be happy to get the occasional box of donated fruit...? I know it will barely dent your orange mountain, but it might be a start...

What if you put fresh juice straight into jar and then can it? Eliminate the boiling?

The vinegar is good for cloudiness but your lids will start to rust very fast if you don't clean off the vinegar after they cool down xx😊

We’ve just switched over to Weck jars that have glass lids so all should be good from now on. Will definitely remember to rinse the others if I continue to use them for canning. Thanks for the tip 😃

I know in the US companies that do mass production of orange concentrate, hold the pulp in barrels for months before packing and freezing. How they preserve them in barrels have no idea.

Was wondering if you could reduce it to a concentrate as an experiment. That's how the big companies do it, saves on needed storage space. Then when you want to drink it you add water. But I'm pretty sure you would lose a lot of the flavour and nutrients 😬

We’ll definitely try making syrups, cordials etc in the future but that takes a lot more energy. I’m pretty sure it also removes almost all of the nutrients because of the higher temps and longer processing time

I haven't eaten oranges for years because of their high fructose content. but what i love - freezing lemons - or lime juice. canned juice - all vitamins are dead. The worst thing is bought juice because of the high concentration of fructose, which is only broken down in the liver like alcohol and ends up as a fat pad if there is too much - the path to fatty liver and dibates is paved
