I am so blessed! I wish I knew someone that liked pears but no one I know like them! So I can them- I do them every way that I can think! I make pear butter, pears with the little red hots, pears with vanilla, pears with vanilla and red hots, pear jelly, pear and apple sauce. Like I said, every which way I can think! God Bless you and yours!

If you bury the trimmings and don't turn them with dry decompossable material, the trimmings undergo anaerobic decomposition, roots and produces methane gas. If mixed and turned routinely, it will undergo aerobic decomposition, compost and produce carbon dioxide. Rotting will stink, attract bugs and rodents and can be a source of bacterial and fungal diseases carried by both. Methane gas is also 20x worse than carbon dioxide as a greenhouse gas. It's just a lot better to compost your kitchen scraps than burying them to rot. But, they're your scraps. Thanks for the video. We have lots of pears every year and we make pear chow, butter and preserves. Love pear cobbler.

I just canned some red hot cinnamon apple slices. I had a pint of syrup left, so I canned it too. My question is, I didn't know you could use such heavily bruised fruit, even in a "butter" recipe. I was reading an old canning book and they put the pears and other fruit in a salt solution to prevent browning. My mother always did this and so do I. Never any browning and works much better than lemon juice. (cheaper too) I don't think it adds a salty flavor. I just never see anyone ever doing this anymore.

Being that I live in SE Georgia I have no experience ripening the super cold hardy varieties like John Pear. My 13 trees are all low-chilling Deep South varieties. However, judging from the amount of internal breakdown your pears were showing, I suspect that you would be better off if you process that variety while the pears are still a bit firm. Many of our low-chilling southern varieties would have the same problem with internal breakdown if I waited until they were completely soft before processing. For sure firm pears are harder to core, but I tend to prefer the texture of the final outcome when I process even the truly soft varieties while they are still a bit firm. I loved the video, and I love getting to see a new pear variety even when it's one that I can't grow in my climate.
