I like to can my pumpkin as pumpkin soup starter. I add the spices I use in the soup before canning. When I want to make soup, I blend the pumpkin with the juice and some cream cheese and heat. Very easy.

I made up some jars of pumpkin and some squash this way. I eat it as a side dish also. Bev I enjoy your videos. My mom canned a lot when I was young. Now that she is gone. It's nice to have someone to learn from.

I have never done pumpkin that way. I only have the water bath to use. With that I just roast the pumpkins at 300 in the oven for about 2 hours then water bath can them. Dont know the shelf life because they never last long. On the plus side this year I followed your video on making tomato powder and I did it with carrots and this last week a sweet pumpkin. A few spoonfuls in a stew and it tasted really great. Hugs dear, Julia

+Julia Com pumpkin is low acid..and I would \NEVER water bath can it. Do you add lemon juice?

Actually I use grapefruit juice just because I love the flavor. When I roast them I cut in half and add the juice and sometimes a few herbs depending on what its used for.I also put a bit of juice in the jars as well. This last time I did not add anything because it went into the dehydrator. Just mashed and dried it. Julia

I find it easier to cut the pumpkin up then clean out the seeds and such. Don't forget to roast the seeds too. They're always better than store bought!

Really going to have to try this. Never canned pumpkin & now they are 2 for 1 at some stores. Tonight I made 8 pts of apple pie filling. So good. Had a little extra & just had to put it over ice cream,yum!!

Nice video! I'm watching while canning my first Musquee de Province (fairytale pumpkin). It was about 16 inches in diameter and 8 inches tall. It weighed 25 pounds and we got 20 pints out of it. It's a VERY orange pumpkin even after boiling a bit and VERY sweet. Can't wait to grow them next year!

I just went today and got pumpkin, butternut squash and cushaw to can from our local greenhouse. I wasnt able to put out a garden this year due to some health issues. I cut up my pumpkin the same way you did because of the pain in my hands. Finally found out the cause only took two years, and a bunch of tests. I have neuropathy it has progressed all the way, and fibromyalgia. Looks like I have to be finding different ways of doing things. Enjoyed your videos, as I do all of them.

i never have to worry about pumpkin here- every year for as long as i can remeber my kids bring me pumpkins- and i mean lots of them and help me clean and process them for later use-most get diced and jared up in quarts- but some we bake and remove and put in freezer bags so the kids can take it home pop it in their freezers and have pie making stuff in a flash-- so glad Sunny has started her own canning- best pies are made from fresh home canned pumpkin...love and huggs wish i was there

+movinon04 I hear that Honey! I don't think I have EVER used canned pumpkin..maybe a LONG long time ago..but even before I started canning I would bake a pumpkin and scoop it out and freeze it for pies! Missing you!!

If you ever have any trouble getting seeds from pumpkins to sprout try instead setting an entire pumpkin in your garden in the fall. Leave it out all winter exactly where you want it to sprout. Then in the spring you can gently use a shovel to spread it and its seeds out a little the pumpkin meat and skin help give nutrients to the seeds so they can sprout. We like to carve our jack o lanters the night before halloween then set them out in the garden and put the seeds under them. You can cover them with a little straw too. Mine grow every year I never have to plant seeds. To get those giant pumpkins you see at the farmers market add some fish meal and some seaweed to them they will grow HUGE. Canning pumpkin puree is a pain my grandmother used to do it and your supposed to add a lot of water so its not so thick but then you have to boil it off to make the pies. Cubed is much much easier!

I'm new to canning and I love your videos. I want to can and dehydrate everything I can I make everything that I can from scratch. So all the information you give is so wonderful. I was wondering how to canned pumpkin so I don't have to buy the stuff from the store and you answer the question with this method. How do you then prepare your pumpkin puree? Do you drain off the liquid and puree? And how does this pumpkin preservation method compared to your dehydrated pumpkin powder?

i was fortunate enough to hit a sale on 100% canned pumpkin on sale for 25 cents each! i bought a ton of them they don't expire until next december! i never thought to can it myself it seemed like too much work. You made it look so easy that i might try it myself. btw i went to the market the other day and canned pumpkin was almost three dollars a can!

+It's A Mom Blog Apparently there is a shortage this year..when your canned pumpkin comes up on it's expiry date..cut half and half with water and dehydrate it!

I don't have a canner yet, just a water bath canner, so I freeze or dehydrate. i cut my pumpkin ok n half, scooped out the guts, and put it cut side down in an electric fry pan with water, lid on. The stem end has the hole which lets steam pressure out. as soon as it is soft, which only takes a few minutes, I take out and scoop out the flesh, easy peasy. Here's my next trick. I take the skin and the guts, minus the seeds, puree them, freeze some, dehydrate some. I know it's edible but I make sugarless pumpkin cookies for my doggies treats. They love em, good for elimination, and all natural. I have heard of people making pumpkin bread from it. Might try that some day. ( I gotta get a canner)

Jenny Jane I had an older dog that had digestive issues. We would add a scoop of plain pumpkin on top of her morning meal. She loved it. My 3 other dogs dont need it but they love it

It's good to see you back to your normal cheerful self. Thanks for the video. Noticing your kitchen in the background, it looks like a totally different kitchen than the one in the older video. Howie did a fantastic job of renovating. I do have a question for you. I've always used the cooking liquid instead of boiling water and if I have any left after filling the jars I can the extra liquid to use in soups and stuff. Is it just personal preference or does it make a better product to use fresh water in the jars? One other question, How does the white pumpkin taste?

You might have tried this . But with winter squash if you put it in the microwave for a few minutes it can be peeled a lot easier . It also can be split easier . Just a tip I like :)

I agree with your vid of canning pumpkin Bev. Just watched a vid where a man water bathed pumpkin puree for 10 mins. I did tell him water bathing pumpkin puree was not safe nor approved and told him why but he said he had always canned it that way with no problems. I said that did not mean his way was safe or correct and should not be teaching new canners to use that method. I am sure he will be on my case shortly.

Could not of come at a better time, I was just telling my wife yesterday that I wanted to go get some pumpkins next week and can some for pies. Is a pint jar enough to make a Pie or do you need a quart?

I have never heard of canning pumpkin except pie pumpkins. How do you use other types of pumpkin? Or am I living under a rock? LOL!

Does yours take 45 minutes or longer to come down from pressure? Mine seems to take forever to drop the pressure pin so I can open it and then the jars lose liquid in the pressure canner. About 10 to 20 % of liquid. They still sealed though. Don't know what I'm doing wrong .? It's happened for the last three things I've canned. First, kielbasa, then pairs, then salsa Verde. But it didn't happen before that. Any ideas? Ty.

allow the canner to cool naturally..mine sometimes take overnight..so don't move them..if you are losing too much liquid then you need to debubble better..but if sealed..then no worries! Hope this helps!

l just found 6 jars of my sweet beets, dated 2009. Openex one and there was like a rust inside the lid, the second one had a funny taste. Shoud l ditch the rest?

+Phil78 Jars and lids are far cheaper over here in North America. At Lakeland, I see that a box of 3 x 500ml Kilner brand Preserve Jars (Mason jars) are $10.75 US (7 pounds). In Canada, for $6.00 US, we can get a dozen of those same jars (Golden Harvest brand). The replacement lids are similarly cheaper. And in the States of course, the prices are far cheaper again. Still, we moan anyway about the price of them, that's for sure!

I have never understood why you can't can pumpkin puree. It seems just like applesauce in its consistency to me and that can be canned. I've never tried to can it though. I might this year, in chunks.

True. But they relate it to the density, not the acidity.

+Lucky Robin In 1978, a University of Minnesota research team headed by Edmond Zottola evaluated canning pumpkin and found it was potentially unsafe because the viscosity varied wildly and the results were just as uneven. Some jars of mashed didn't get heated thoroughly enough and bacterial spores that the jars had been inoculated with for the testing were able to survive. So, it's Russian roulette. Cubes of pumpkin, however, were found to allow necessary heat penetration through the jar. Why wouldn't you just can the raw pumpkin since it will cook in the canner during processing anyway?

LOL, when you said "clean, damp rag" I heard "clean, damn rag"! lol, anyway...I'm a serious pumpkin pie girl, how many of those jars/pie do you use? I'm talkin' a good thickness now not a skinny pie.

+This Old Homestead I use on jar per pie..once drain and mashed it turns into one cup..I like lots of pumpkin in my pies!

the government doesn't recommend pureed pumpkin through the pressure canner, but that's how you buy it in cans in the store??????????????? what's the deal here?????
