Canning tomatoes - how to can raw pack tomatoes. Tomatoes can be canned using a hot pack or cold pack method, using a water bath or pressure canner. We can ours using the approved method for raw pack canning in a water bath canner. We use no additional liquids. The only additives are canning salt and lemon juice or citric acid. We'll show you how to can tomatoes using a water bath canner, mason jars, wide mouth lids, and wide mouth rings. We do not use Tattler lids. We prefer the traditional simple lid / ring combo. We also use a very simple recipe with no seasonings so those decision can be made later during cooking, making them useful in any number of recipes. Please always follow safe and approved canning practices.

We use the raw cold pack method also... picking about 7 quarts worth of tomatoes (not including our san marzanos) a day on the average right now. We are freezing all the san marzanos for a major salsa weekend this fall...

We really try to keep things as simple as possible, or we could not keep up... Things happen fast here... And while I think the canned stuff looks and tastes great, we aren't taking it to the county fair to compete for ribbons... LOL No need to get too complex with it... 👍🏻 that’s how I do it too. When I get them skinned I usually toss them in a big colander to drip some tomato water out but I’m definitely going to start dumping some off when I pack also I never thought of that.

Loving your canning videos! I learned to can from my Grandmother - water bath only though! Wanted to share that for the first time, this year I used a CampChef to set up an "outdoor kitchen" for my canning. It was the best! I will do it every year as it kept the house cooler during the hot summer canning sessions. It also allowed me to sue 2 canners at once. I highly recommend looking into it since you guys can so many amazing things:)

We have a pair of water baths and a pair of pressure canners... we use both often... Thankfully, we can isolate our kitchen temp wise and not heat up the whole house, but I will check into the campchef stove... Thank you for the suggestion !

I think you’ve solved my problem. I’ve had several jars not seal due to liquid and tomato part getting under the lids. I was not letting jars cool in the water first. Thanks for the tip!

This is very common practice around here. Makes for deeper flavor in soups and stews and I use it a lot for instant tomato paste. When you work so hard on your garden,you want to get all you can from your efforts!

We have canned all we need, given away tomatoes until people are now avoiding us (LOL), and donated as many as we can.... ahahaha Now the chickens and ducks are even wanting their corn back...

Heat your tomatoes up before putting in jars. This will keep them from floating. Also, use regular bottles when you cold pack. The shoulders of a regular jars keeps them from floating a little.

Canned tomatoes are pretty versatile... We use them like you would crushed tomatoes mostly... But you can boil them on down to sauce, or leave them in large chunks like stewed tomatoes... That is why we dont pre-season them... Never know what they are going in !

Not sure I have ever grilled a green tomato before... We like to make and eat them the regular way... And yes, you can can green tomato slices for fried green tomatoes... You just cut them a little thick and then add some "pickle crisp" to help them hold their texture... But we eat fried green tomatoes this way all winter long...

The jars are sterilized (perhaps I should have been more clear on that) but they are room temp by the time we pack them... I do understand you've likely seen "hot jars" in other videos, but that is so the jars don't split when you pour boiling water in to top off the jar... In this case, the tomatoes are being canned in their own juices... Now you do want to be careful not to temp shock the jars going into the waterbath... We use hot tap water to fill the canner (which they can take) and put the heat to the canner AFTER it is loaded... Takes a few minutes more to get up to boil and start the timer, but with the lid on, it is a minor delay... I hope this helps ! Thanks for watching !

When I fallow this, after I have them packed and I put them in the canner pot, put the cap on and tighter the ring down? And then cover the jars completely with water in the pot?

They are packed in the jars with the caps and rings, then into the canner which should have enough water to cover them... If you are having difficulty, I would suggest consulting the Ball Canning webpage for clear step by step instructions...

They can be canned without seeds, for sure ! And USDA says you are not to reuse lids... However, if they are not bent and you boil them to soften the rubber seal, then... Well... (LOL... As a content creator, I cannot advise it, but....)

Yes you can... Use a wide mouth jar... Slice your tomatoes just slightly thicker than you would for normal friend green tomatoes... Do the lemon juice and salt the same... Add like 1/4 tsp "pickle crisp" to each quart jar... Process the same... The pickle crisp will help them keep their texture... Good luck !

I didn't think you could use an enamel water bath canner on a glass top stove! Do you also pressure can on your stove? I just bought an electric water bath canner because I was told I couldn't use my old one.

We use both canners on our stove, but it is rated for canning... I am not sure I would attempt it on just any glass top...

Most videos I’ve been watching says to boil the jars in the canner for 45 minutes. Is 85 minutes because they are raw? Did you boil the jars to sanitize them? Thank you.

Yes, the jars were boiled to sterilize... And yes, because they were cold packed...

No... The lids should be sealed down, and the rigs removed after they have cooled...

I’m getting ready to can some tomatoes today and now I’m confused as to what to do I’ve seen a few videos but am I supposed to cook the tomatoes? I want to use some for chili and make some spaghetti sauce and salsa I have a better homes and garden big book that is all about canning but I’m not sure should I cook them?

You cut and x in the bottom and drop them in hot water to blow the skins off.. You can heat them before they go in the can to prevent them swelling inside the jar later... But a good cold raw pack and warming up the canner slowly after it is loaded gets the same result...

@@BumbleBeeJunction so I've canned some since I left this comment Now I have more questions So I was with my friend canning and we blanched them probably a little bit longer but after we peeled the skins away we cooked them down some put them in hot jars with hot lids and heard them popping but the newbies we are we pressure cooked them anyway so I done this for 13 hours well her mother in law said if they popped on the counter we didn't have to pressure cook them and a man told me that's cold canning well I canned some brown beans I put the salt and lemon juice in the beans too some things said use juice some said not to but I wasn't sure so I went on and done it So here's the crazy thing Me I'm the crazy thing I went to the wholesale Amish produce auction today and had gotten 3 boxes the other day and 24 boxes of tomatoes today they are 20 pound boxes so 540 pounds of tomatoes I'm crazy I already know 🤦🤦🤦🤦🤦 What was I thinking Any way so now we're gonna get busy but her mother in law said to blanch them a little longer than normal then cut them put them in room temp jars with hot lids and they will seal and we don't have to do anything else My kitchen is cold so I'm not so sure about that I'd rather heat the jars up than put hot food in a possibly cold jar I've busted a coffee pot when I was a kid by putting cold water in it What is your thoughts about all that?

You can... Sometimes the seeds will discolor on ya though, which is a little unsightly...

Great video. I appreciate your advice to be safe and always check things out on safety for yourself. Most people don’t do that and some of their methods concern me so, than you for that. Just want to say, you don’t have to say you’ll cut back in and out on the video. A lot of youtube people do this too without realizing that viewers aren’t on your side of the camera and it’s not necessary to know when you turn off or on your camera. We just want to see what you’re doing and learn. Know what I mean? Watch your video and you might see it from our point of view. I hope 🙏🏼🙏🏼🙏🏼 this isn’t offending you. My reason for sharing is to help you have more viewers 👍🏼👍🏼👍🏼 and a better channel, not to criticize you. So try not telling us every time you cut the camera in and out. I think we all do this in the beginning of making videos but if you watch your own videos, you’ll see what I mean. Never feel the need to rush at times either. Just share what you do because most of us want to do the same thing! The more information we learn, chances are, many of us will end up homesteading to one extent or another. About the smallest tomato we've canned would be a plum tomato, and they were almost too sweet... My best guess would simply be to try it... We just have not ran across many recipes / dishes that called for an abundance of cooked cherry tomatoes is all... But on the other hand, if you have them at a large enough scale to can, then I would not let them go to waste....

Yes, it keeps them up off the bottom so the glass heats more evenly and the jars don't break...

No... Most tomato preparations are water bath canned... You should always double check to be sure, but plain tomatoes are water bathed... LOL Thanks for watching !
