Lovely looking sauce. I had just finished processing the last of my tomatoes from the garden and sat down to take a break. I laughed when I saw your video today making the same thing. I’m really enjoying my new machine for processing tomatoes. We finally finished picking our garden at the farm, we harvested over 80 pumpkins - so I’m also making pumpkin soup for supper as well. I feel the same way about tomatoes right now too. If I don’t see another one until next year that is fine with me, lol.

Harriet Martens...that's a lot of pumpkins...you must have a good size farm! Yes! but when next year comes around, I take out my "machine" and get right into processing that new batch!!!

Brittani, You sure do if you want to can any serious amounts of tomatoes, and those people buying up 6 to 10 bushels of tomatoes were likely teaming up with family members, one of which definitely has one of these machines.

Hello, very inforamtive videos - thank you! Do you use a pressure canner to process the tomato sauce with/or without any acidic acid, and do you "sterilize" the jars before fillling them? Or do you use a water bath canner using acidic acid? Thank you again! Ron

I used a pressure canner once for tomatoe puree and didn't like the results...I have always water bath canned...You can add lemon juice (acidic acid) to the (pail) container of tomato before filling the jars...

Thank you for your numbers. Could you please share from the 5 gallon bucket of puree that you showed - how many pounds of tomatoes were in that 5 gallon bucket and how many pint jars were you able to you fill? Was that the last 50lb bushel or only a portion of it? Thank you.

I can tell you from years of experience that a 50lb bushel nets anywhere from 15 to 18 QUARTS depending on how much water is strained out after blanching/cooking and before going through the press. That would be equal to 30 to 36 PINTS for a 50lb bushel. I have never measured it from the 5lb gallon bucket.

How long do you boil them? I tried this and mine were super watery. I boiled them for about a minute.

Lindsey Gunsauls ...I boil them until I see the the skin split of a few of them..that can take 5 minutes or longer depending on how many I am boiling at one time..YES they ARE watery when you remove them from the boiling water and NEED to be strained to remove excess water. If you are processing a bushel of Roma tomatoes and using a Tomato Mill you should net out around 18/20 quart jars..depending on how much water you strain out...I usually net out around 15 qrts or 30ish pints, mine is thick enough that I do NOT use Tomato Paste or any thickener when cooking....others exceed 20 quarts per bushel because they strain out less of the water.

I bought a vervo and I'm not happy with it. I blanched my tomatoes. The auger kept Ed getting clogged up. I had to break down and clean machine 3 times.

Curious to know if you have tried other fruit in your tomato press? Plums for instance.

Jo Sawyer...Ok. I have not however, I would have no qualms processing Apples to make apple sauce, if I had access to bushels of apples and wanted to make that much apples sauce. Plums would be fine as long as you remove the stone first (the stone is too big to make it past the screw feeder) Pears would be fine as well. This unit produces a puree and is best used to process larger quantities.

Does your sauce separate? I get about 2” of water floating on the top.

Yvette Loew...No mine don't separate. Firstly...Your tomatoes if properly canned and sealed are perfectly SAFE even if they do separate...you can either pour off the excess water or cook it down...now WHY do mine NOT separate and yours have done so?...Apparently it has something to do with an enzyme that is released when a fresh tomato is cut or crushed and not heated right away...If you watch my video you will notice that I do NOT cut my tomatoes. I just wash and blanch FIRST until the skin splits, then if canning whole tomatoes, i will place in cool water before pealing...If I am using my tomato press, I just strain off as much of the excess water as I can and even crushing the tomatoes at this point before I put them through the press...This is the way my mother taught me to can tomatoes, and hers were ALWAYS beautiful..

Wael Mohammed...This machine was likely discontinued years ago, I have owned it for over 35 years. There are likely newer models available ...this one is an O.M.R.A. made in Italy .5 horsepower electric...p.s I would look around where you live locally for one, sorry I don't know where you can buy it.

Have you made tomato paste from the seeds and skin? I used the hand crank version of this machine but I didn’t heat the tomatoes. Great job!!

No I have never made tomato paste and haven't used it in years. I try to use tomatoes that are real meaty and drain excess liquid out as well, the end result is thick enough after cooking that I do not use paste to thicken. Unfortunately as I have no animals it is placed in the compost heap or garbage. The hand crank is really good to have and use as well just extra work and blanching the tomatoes may also be extra work, but that is what I was taught by my mother and it works for me. @@HerHomesteadSkills I dehydrated those skins and seeds and ground them up in my food processor and made tomato powder. I cored my tomatoes and ran them through raw as I didn't want the core in my tomato powder.

I thought the idea of using the tomato mill was that you don’t have to blanch them at all. Is there a reason why you do?

1) That the way I was taught buy my mother and grandmother 2) They go through the mill so much easier 3) I don't have to cook the tomatoes after they have been milled..It is still very hot going into the jars.

I'm getting mixed signals about adding citric acid. Need to or not? To me, it alters the flavor.

ok far be it for me to go against the "powers that be" and you should do what you feel is safe....however having canned tomatoes for a lifetime, I can tell you that I know of no Italian families that have ever added citric acid to their canned tomatoes...HOWEVER, much like the Amish...they are water bathed for much longer than what is recommended by...____..in fact, many fill a drum or very large pot with as many jars as possible and they are water bathed for at least a few hours "outside" and then left to completely cool before removing them.

I just put my maters thru the mill raw. I cut em into smaller chunks & send em thru. Run the skins & seeds thru a second time usually...Then I pressure can the pulp into jars & their ready for chili or whatever.

Grace Gracee..it is an O.M.R.A. No 3...it has a .5 horsepower motor..I don't believe this model is still available (I have had it for at least 35 years) .there may be an updated one and there are other versions available .

Pls BTW -(a)is tomatoes sauce d same as tomatoe paste/puree? (b)And I would like to know what are the main steps when making/cooking tomatoe paste/puree (c)and if a Miller like yours will be needed?. Many tx in advance

Grace Gracee..No It's Not needed..you can use whole peeled tomatoes, but it does remove all the seeds. The main step when cooking a good tomato sauce is 1. Browning some meat with onions and garlic in a bit of olive oil. You can use any meat ..pork, beef, goat..etc.. the choice of meat will impart a slightly different flavor to your sauce, these days I mainly use pork..2. add your tomato (puree) and herbs - basil, parsley, a bay leaf and salt is all I add...simmer until cooked...3. If your sauce needs tomato paste to thicken it..add it ! 4) If your sauce is too acidic..add a half of carrot during the simmering process to sweeten it. ENJOY!!

@@DianeStPeter The .5 Horsepower was a gift from my mother. It is more than adequate for my needs, and especially today, when there is only the two of us. I have done over 300lbs of tomatoes in one day in the past...but that kind of load is only done 1 to 3 times a year in August...The 1HP would be nice but not necessary for me.

If you have the very nice machine that does tomatoes why do you peel your tomatoes? Doesn’t that separate the skins and seeds ?

Yes, you are right, but I did want a few jars of whole plum tomatoes...and when I made salsa...I didn't want a puree!

Brand: O.M.R.A. 2810 Electric Tomato/Fruit Press, mine is very old, and there are many variations available these days. I also have a manual one for small batches.

marlena dailey...actually this is an old machine and does a great job, no need to run through a second time, comes out fairly dry the first time...I have watched others use other machines and run the pulp through NUMEROUS times...I was surprised!
