The left over tomato skins are excellent for making your own tomato bouillon. Just dehydrate the tomato skins then grind into a powder & store in an air tight container. Excellent in soups, Spanish rice, etc.😊

Putting them on their sides can also compromise the seal(especially if you use lids that don't have such a clear sign like mason jar lids, that the seal is damaged), so better let them cool upright and just turn once before using. Separation is not a bad thing. And a little fyi, if you want to add salt to the tomatoes, don't use table salt. Something in the iodine can make canned food taste funky. It won't be harmful, just affect the flavour. Use rock salt or sea salt. And most importantly. Never trust anyone who tells you just filling hot liquids into jars will make a can. The ONLY thing this works for is jam, anything else needs to be boiled as shown in the video.

Even with jam you need to sterilize jars and lids first or the will mold.... don't ask me how I know 😮‍💨😔

Wow, as someone who married what was once a traditional family, I’ve had to climb the ancestral ladder to find anyone able to still can so I can learn and pass down to my kids. That was before such easy and amazing content was so easily available - thank you!

You need to add lemon juice to each jar to increase the acidity so it's safe to can. If you don't you risk botulism.

Every cooking video I've seen with tomatoes mentions adding sugar to "cut through the acidity". Is this specific advice for tomatoes, or just something for canning in general?

Tomatoes are already highly acidic. Unless you're planning to keep them for 3+ years, you don't need to add acid. The sugar and acid make Tomatoes a good natural canning food.

First time I've ever seen somebody water bath can without fully covering the jars in water, also first time seeing somebody laying the jars on their side after removing them! Very interesting I wonder the reason?

New ball lids should not be boiled before using. That over softens the seal.

My grandparents still do this method year round with most things in their garden, like right now beets. No need to keep them from separating ! Love this post ❤️

Also, lemon juice to keep acidity consistency. No laying on the side. Botulism is serious issue if done wrong. One Inch water over jars to insure safety.

Boiling water bath has to have the jars covered with water and you should NEVER lay the jars on their sides. If you are going to show people how to can something, you should use tested, proven processes. Always refer to the USDA guidelines.

Nonsense. She uses European Standarts for home canning, not industrial standarts like the people in the US do, which are not replicable at home anyway. The (top) jars are always only 3/4 coverd in water when waterbath canning for the exact reason she mentioned. And puting them on the side or top for several minutes is for waterbath canning not nessecary but also not harmfull.

Yo hago salsa casera de tomate , cuando está recién hecha la pongo directamente en los botes y boca abajo, cuando enfrían los meto en la cazuela tumbados completamente cubiertos de agua así si tienen algo de aire se ve que salen por las burbujas, dejar templar en el agua y sacar, seguramente no sea necesario pero los almacenó boca abajo para asegurar que haga bien el vacío, y tengo salsa casera de tomate para pasta, pizzas, lasaña ... me dura perfectamente más de un año si es que llega ...

At home we got sooo many tomatoes and we just started skipping the deseeding part. We also leave the skin on! Just put them in a pot medium heat, blend them all and stir sometimes while boiling. Put in jars when you like the consistency. :) no difference, same tasty tomato sauce!

Suggest you double check with your local University Extension School about laying the jars on their sides for 24 hours rather than standing them upright for 24 hours.

My family does it a little different. For one we get about 11 bushels. We boil the tommatoes, peel them, puree them, boil the puree, them jar it with no air left in the jar.

You don't need to pressure can tomatoes. They are acidic and the water bath method (like she did here) is all you need to do.

Genuine curiosity. I haven't started my canning journey yet but plan to for next year. I've read with water bath canning for tomatoes you need to add an acid. My biggest fear is making my family sick.

I remember doing this with my grandma and my mom. I was a kid so I got to squish all tomatoes up. We did tomatoes, green beans and dear meat. Those green beans were the best I'd ever had. Sadly, both my mom and my grandma are dead now. My mom died on her birthday when she was 45 (in 1999) and my grandma died unexpectedly during surgery in 2003. What I wouldn't give to have them both back so we could can together and I could actually learn how.

Are those reusable jar caps? That would be very interesting as in Italy we always put them to waste after only one use

@Giovanni Borrini - I don't think they were, but in any event... if they were single use lids, I save mine to use over & over for dry goods storage, in my fridge for salad dressings, leftovers, etc. Always multiple uses in my house. 🙂
