Thank you so much! This was BY FAR the clearest demonstration of water bath canning that I have seen on KZfaq. No one else shows whether one should fill the jars with water when one heats them in the canner. Even my Ball cookbook did not not make that clear. It seems logical of course because without filling the jars with water they just tip over because they are too buoyant, but I wanted to follow the directions in the book exactly and without that explicit instruction there was no way to know. Even the picture in the Ball cookbook was unhelpful. Again, thank you!!!

You are marvelous. Answered all my questions. I did not want to invest in a canner just to find out that I rarely used it or, it's just not for me. Now You have taught me how to substitute a rack in my stock pot. My first food will be sugar free pickle relish which is quite expensive in the grocery store. I also plan to try spiced apples which cost about $4 in the store and only has 1 apple in the jar! I am on it doggone it.

Omgoodness this is the FIRST place/video/website where canning is just told simple, cut and dry. Everyone else makes it sound SOO scary and complicated. Thank you for this. Now I feel confident to try canning some food. I know I should never reuse lids though. Thanks for this video. 👍🙂

I was able to pick up 125 vintage quart jars with glass lids for $50. I picked up some new rings, and after watching I feel this isnt gonna be a problem. 👍👍👊

This was the best canning vid I've watched!! In other vids, they are not covering the jars with water. Only the bottom. I feet more comfortable doing it the way you did it.

Do you not tighten the lids to allow the contents to expand and boil out through a gap? I am afraid the jars might explode. A metal tool can't scratch glass.

Thank you , for your tips for sterilizing & canning of the jars! It’s easy to follow ! Now, I can make a chili garlic sauce co’z I have many , a lot I mean fresh chili red peppers 🌶 in our garden bed soil to harvest in our backyard. 😘👌

Thank you for this; it gave me the courage to try pickling green tomatoes. I'm in Germany though, and my German is not quite perfect, which led me to buy ready-made canning brine, when I thought I was buying vinegar. I added water to the brine, not knowing it was already diluted, so I have roughly half as much vinegar in the brine as my recipe calls for. Assuming I get good seals, do you think my pickles will be safe to eat, seeing as they will have less acid in the brine? Also, how long do you wait before eating them? Thanks very much.

Nope, leave the ring off during storage to keep moisture from getting trapped between it and the jar.

What do you call the grid that you put on the bottom of the pan, that the glasses sit on? And where can I get such a grid?

That's called a canning rack. You can buy them in hardware stores. You can also use any rack that would fit your pot (I've used round cake cooling racks, for example).

You want to put the filled jars into the canner full of hot water right away and return the water to a boil as quickly as possible.

why do you have to take the jars out of the boiler... I was taught to leave them in the boiler until the next day. As the jars could crack if cool air the glass - this was what I was taught when canning outside - doing tomatoes ....

Marie G lol they can’t sell you Tongues if you don’t remove them. But I imagine just to get the pan out of the way. I don’t need to get them out of the way I’m not in a hurry if I am canning.

You need to take the jars out of the canner to get a good seal. The jars won't crack if you place the on a towel covered surface so you don't have thermal shock.

I do. I leave the lids off after I process the jars so moisture doesn't build up and compromise the lids.

Don't know if the fact that this is Acidic "content" makes it difference, but I know out of experience that stuff like bottles peaches can stay fresh up to 10 years easily, would even last a whole generation if the bottle did not become damaged or if the seal didn't break or crack somehow.

i got 6 Mason Jars and canned some chicken Breasts for my dog. I boiled the Jars for 15 minutes, put my raw chicken breasts in the jars and boiled for 120 minutes. Let the cool overnight but only 3 jars are vacuum sealed, why this happened ? Should i boil those glasses again ?
