I'm gonna share with you how I make my caramelized spare ribs, AKA suon ram man. But if it doesn’t burn my bootyhole, then I don’t want it so I'm gonna eat mine with some Thai chilies.

SUON RAM MAN- CARAMELIZED PORK RIBS
2 lbs pork spare ribes
4 green onions, chopped, white parts only
3 TBSP garlic, minced
3 TBSP fish sauce + 1 TBSP fish sauce
1/2 tsp black pepper
1/2 tsp salt, optional
1 can coco rico (12 oz)*
2 TBSP oil, for cooking
*or 12 oz water or 12 oz chicken broth
1. Soak pork ribs in water + salt for 10 minutes to clean it. Rinse pork ribs and dry with a paper towel.
2. Marinate pork with: white parts of green onions, 3 TBSP minced garlic, 1/2 black pepper, and 3 TBSP fish sauce. Marinate for 10 minutes at room temp.
3. In a wok or skillet, add 2 TBSP oil + 2 TBSP sugar. Then turn on heat and cook until sugar starts to caramelize. You want it to be a deep amber/ brown color.
4. Once the sugar starts to bubble and theres a brown color, add your marinated pork ribs and cook til all of the pink is gone. It will take 1-2 minutes.
5. Add 1 can of coco rico, 1 TBSP fish sauce and 1/2 tsp salt- if you are using. Combine well then reduce heat to medium low and simmer for 20-25 minutes. Skim off any gunk/ foam/ impurities that float to the top.
6. After 20-25 minutes, crank heat to high and cook for 5-10 minutes. Your sauce will reduce and thicken. Once that happens, turn off heat and garnish with scallion and thai chilies. Serve with rice. Bon Appetitties
