In this video I will show you how you can build and use a simple cardboard cold smoker from a standard cardboard box. This project is a real must for anyone looking to get smoking cheese and fish at home. The cold smoker uses standard food racks in it's design and can be adapted easilly to cater for the size of rack you are using. Obviously, first you'll need a box to fit your food rack.

Great video. I made a cold smoking box last week after watching. I used a 1500 liter heavy duty cardboard box I bought from Amazon and instead of using wooden dowling, I used 8 mm allthread with large outside diameter washers and nuts both sides of the walls for a really rigid structure. Started cold smoking a nicely cured salmon this evening and should be ready in the morning 👍🏻

Yes, it would work for most types of fermented dried sausage 👍

Thank you for that video, very straightforward and clear. Do you have experience with cold smoking beef jerky and what would you recommend going about doing that?

thanks for your message, if you want to cold smoke jerky you can do this once it has dried as it will be stable. you can smoke it to your taste.

@@Coldsmoking thank you for your answer! I just finished a 24 hr marinating my meat and patted the pieces dry. I transferred a few trays with meat to my biltong dryer, which is basically a box with a small computer fan. Will this work? I don’t hold you accountable for the outcome😂……. How dry should the meat be before I put it on my bbq and do the cold smoke?

My jerky method relys on a faster drying time in the oven (set on a low heat with the door slightly open). I'm just about to publish a Duck jerky video which shows you my method of drying which I apply to duck and other meats. I personally haven't dried jerky in a biltong box but I cannot see why this wouldnt work, especially if it works for biltong. The dryness is quite important and you don't want it to be too dry it snaps when bent. It should have a little flexibility in it so you can bend it without it snapping. The meat should be dry to the touch. Good luck with your project.

@@Coldsmoking thank you. I can do that, but at what temperature in Celsius do I set my oven? So that It is safe?

@@janhuizer5382 the lowest temp. my oven is 50C fan but with the door slightly open the temperature is much lower

@Coldsmoking In the video 14:57 you never used the temp. probe, to show us the temberature in the box. I wonder why... was it too hot maybe 🤔

@@Coldsmoking thanks for replying. But will the temperature here be too hot to cold smoke them? You mentioned you cook them at night in England during the summer. But here in Florida it’s still at least 70 degrees at night.

you could convert an old fridge to a coldsmoker. you could smoke all year round then!

@@Coldsmoking so if I try making kippers in a cardboard or wood box smoker when it’s 70 plus degrees it won’t work? What will happen? They’ll be over cooked?

They should be ok. kippers do tend to cold smoke at a slightly warmer temperature. up to 80f

Thats not technically cold smoke. Cold smoke would maybe be two boxes with the second feeding off of a thin hvac furnace flexible furnace into box #2
