In a way, your philosophy about cooking reminds me of Bob Ross' philosophy about painting. Basically, just try it and stop being so hard on yourself! Of course you won't be perfect, so don't let perfectionism stop you! It's really inviting and fun to watch.

Grady Smith thats what I love about cooking! You can be the perfectionist like Gordon Ramsay who puts 110% in one dish so that the customer feels and tastes your passion in the food you made or you can be the one who lets it flow and feel the authenticity in your creativity. “Making things from scratch” and culinary arts was all lost as soon as the microwave was invented 🙄😒

It's like baking with your big sis & drinking wine & not caring (too much) how the food ends up (although, it ends up amazing!). I have hot hands. Sometimes you just gotta put on washing up gloves and put your hands in ice water to be able to make pie. It's just the hot hands life. On the bright side, never need a heat pad for muscle pain.

I actually used this recipe, only I switched out the blueberries to peaches and it was a-mea-zing. I also added some basil and it really nicely balanced out the sweetness of the peaches and ugh, it was just so good :P

I want to hear more about the giant snake on the deck that "took 20 minutes." Took 20 minutes...to charm with a flute? To roast on the barbeque grill? To chat with and catch up? I actually made this pie, and it was honestly the best flavor of any blueberry pie ive ever had. I served it with homemade cream on the side, which I made by whipping double cream with cream cheese, sugar, and vanilla. it was SO good guys 😳 definitely worth making

My SIL asked our mom to teach her how to make apple pie. In her first attempt she kneaded the pie dough so hard she squeezed water out of it. How do you get water out of flour and butter? Amazing. LOL

I have four plums that were perfectly ripe a few days ago and that are now languishing in my fridge because I got sick and couldn't make plum cake. I also have five pounds of frozen blueberries, two pounds of fruity local honey, and an insatiable desire to make a pie. These things are going to combine today, and I'll tell you how it goes.

Add a couple tablespoons of cold vodks to your pie dough... guarentee no cracking.. Too much water makes for tough dough because gluten forms in water but pie dough cracks because it is dry. Gluten formation is inhibited by alcohol which will burn off in baking.

I've tried that Kenji trick a couple of times & it's easy to roll out but I noticed the crust has a tendency to shrink once it's baked (even after it's had a proper rest), so you'll have to compensate with a wider overhang. Stella Parks has a great recipe where she encourages just enough gluten formation.

i recommend buying a pastry scraper (plastic one), you can use it to cut the butter into smaller pieces (so less touching, less heat on the butter). looks delicious but blueberries are so expensive in my country...

blueberries are relatively expensive in the United States as well. best to have your own tree(s). if you know someone who has one, you can ask to get a couple of their shoots.

i don't think i know anyone who owns one, all blueberries are imported so i think either the soil or climate that isn't suitable to plant blueberries..i was thinking to use frozen ones but i'm not sure if it's going to be too wet as a filling or not (it's still expensive though)

You don't have to necessarily make blueberry and lime pie. Apple pie with cinnamon, peach pie with brown sugar served with cream, pumpkin pie, pecan pie, sweet potato pie with marshmallows, and coconut creme pie all are good options! Obviously you'll have to look up (or make) a recipe for the filling yourself, but you can still use the same techniques used in this video.

Usually Carla doesn’t disappoint but she did in this vid :/ I have hot hands and I work in pastry. It is very annoying to have butter melting in your hands all the time. Always use a food processor to make pie dough if you do have hot hands and save yourself the grief.

can I just say that when I need that mom/teacher/love of my life vibe, I immediately go to a video starring Carla. she’s homey, she’s wise, she’s just a normal, curly haired, bangin’ lady with an aptitude for food and stuff. I love that she’s not perfect. I love that she’s humble and she loves food. it all shows. I love Carla. I will be purchasing her cook book. I support women in cooking who are living their lives and creating relatable content.

Do people actually dislike the word "moist" or do they just say they dislike it because that's what everyone else is doing? I think it's a fine word, sounds normal to me. I wouldn't think twice about it if people weren't bringing it up all the time...

Have a look at some of the keto channels. They aren't intentionally gluten free but they can give you a good starting point. Low Carb Yum, Keto Connect and TPH Keto Desserts all have recipes I've tried. Mind you I'm diabetic and not gluten intolerant so I'm looking for different things than you would be.

I think if you made this exact recipe but just with a different flour that was gluten free, you'd have a pretty good pie

Considering that the dough-making process doesn't encourage gluten formation I'd say that you'd get a pretty great pie with gluten free flour. Corn or Potato flour should work fine. I'm thinking about making a vegan version with margarine instead of butter, just need a way to substitute egg wash. But it's still a great base!

Thank you for the suggestions. Pie crust isnt that bad to make gluten free. I guess Ill narrow the request to baked goods where gluten adds critical elements to the food. Im really curious about work arounds cause as far as im concerned there is nothing like gluten, chemically speaking
