I've never done it before. I was a sceptic like you, but now I will have to try it. DH doesn't like mushrooms, so I'll put in some other vegetable that he doesn't find offensive. And use my mushrooms for something just for me! ;)

One day one of my older coworkers was singing OPP and I decided to ask if she knew what the song was about... you know, because we were in an office setting and it may not be appropriate... She looked horrified and said, "This is ZZTop all over again! I thought a pearl necklace was just a lovely gift!" Now I think of her every time I hear O.P.P.

For all fellow plantbased people: Just blend some cashews with lots of nutritional yeast + garlic powder and salt to subsitute the parm and voila, you got the equally delicious vegan version! :)

That "no chicken" BTB base has been truly life-altering for me. @CarlaLalliMusic123 your brothy beans are a total staple (and crowd favorite) in our household w that broth base if any of your other veg fans reading need a spin it :-) (Also been perfect for matzoh ball or no-meat chicken noodle imo)

I've made them and I was always pretty "meh" about it, BUT I'd bet money that I used bronze die cut pasta. My main complaint was that it was always glompy and kind of gelled. YOU MAY HAVE SOLVED MY PROBLEM. Such wisdom, Carla. Such wisdom.

oh this is perfect. my current living situation involves having no access to a proper stove or oven, just one plug in induction burner, so i've been sticking to one pot things, and thus not really had pasta made at home in ages. AND THIS LOOKS DELICIOUS. excited to bring home cooked pasta back into my life.

Please look into the issues with better help selling client data as well as the terrible ways they treat and compensate their therapists. As a therapist, I’m all about more accessible, mental healthcare, but better help is not it.

My dad is a therapist and it truly is life saving but yes, but I agree BetterHeIp is not good, very problematic. I've seen a few videos from my favorite creators today and they all had an ad for it, made me sad honestly. They pick content creators with integrity and then use them to sell that service :(

Hello yes hi, I made this recipe yesterday and it was absolutely stunning. The mushrooms basically melted in my mouth. I also added a generous tablespoon of white miso to the stock, for even more depth!

I’ve been doing one-skillet pastas lately, mainly because I hate washing pots. Was skeptical too but it’s all in the timing. I like to do pasta con sarde, or a basic marinara/primavera. Spaghetti’s great because it’s easy to keep submerged as the sauce reduces. I find with other shapes like rotini or fusilli I have to fuss with it a bit more because the ends want to poke up. Love this roasted red pepper idea, esp. with the mushrooms, looks very earthy and rustic!

It's all about the timing and liquid ratio. I was a skeptical with one pot pasta for years but converted after Gabie Kook did it. She was like Carla too, pretty skeptical, but has ended up making a few recipes that way.

Excellent recipe! Try adding the noodle a couple minutes before the liquid to toast them a bit. Another dimension.

Carla! on your note re: steam- i make your burst tomato chicken from TSSG at least 1x/week, and that recipe benefits so much from steam! It saves me at least 5-7 minutes of cook time on the tomatoes to cover with a lid without losing any deliciousness 🙂

CARLA! 2 things: 1) the bold lip - yes ma'am... and 2) you know best, but personally, half the weirdly soothing/ASMR element to watching cooking shows is watching the chopping! I'm not kidding. I'm weird, but watching things get chopped is so relaxing & cool. So I for one would disagree that none of us out here "want to watch you chop" that onion & garlic! It also helps to watch people w/ good knife skills, since I'm always trying to get better. So, chop away, my sister! Just my 2 cents : )

Oh Masterful Carlalla...do you think this would work with fresh pasta as well, or is that a horrible idea? I'm definitely a fan of al dente, so I would want to make sure phreshhh noodles wouldn't get mushy or even dissolve. I believe she usually uses Morton's kosher salt. As for where to find real parm; she's in NYC so I don't think she'll know where to find it in SD, I'm in PA so I would fail as well. But you can try a larger grocery store in your area that may have a wheel or pre-cut wedges available. In my neck of the woods, Giant and Weis would be where I'd check.

If I was going to use boxed chicken stock, should I boil it before adding it to the skillet ? or put room temp stock in the skillet ?

No. You can just put it straight from the box into the pan, but then get it to a simmer/light boil before adding pasta, then bring temp down. Be sure to stir often because it tends to stick to the bottom and can burn.

i would take a bullet for the "vegetable" better than boullion! its just roasted vegetables but it is life changing. its great for vegans and vegetarians that dont like the "meatyness" of mushrooms.

I’m not a huge fan of roasted red peppers in some stuff so I have used sun-dried tomatoes instead or halved cherry tomatoes with pretty good success as substitutes :)

@@CarlaLalliMusic123 Yay! Is it the 3.5 quart size? Color is hard because often certain stores have exclusives. I can just fit long pasta in there, so it looked that way. Also, can I just say thank you for your work! I can’t tell you how much joy you bring to my life and the lives of those I serve your food to. Your eggplant parm with the thick cut eggplant was truly a revelation and a game-changer! It’s even brought my 68 year old father into the kitchen just to make the fried eggplant on its own sometimes.
