THINGS YOU’LL NEED:
8 ounces Carolina Reaper peppers stems removed - NOTE: go by weight, not size. This was about 20 pods for me, but mine were small this year
1 large bulb of garlic top sliced open to expose most of the garlic
1 medium white onion sliced in half
3 tablespoons good quality vinegar distilled white, champagne or apple cider vinegar for a more tangy sauce
½ teaspoon salt or more to taste
1 cup of water or more, as desired

Excellent recipe man! I had about 35 medium/small reapers and got exactly three 5oz bottles full. Guys at work love this stuff! I’ll be planting more reapers next year…Great job!

My hands are still burning not because of the prep(I used glove in prep) but washing the dishes I did not use gloves. 😁 this is an awesome sauce. I made it from 12 oz and have exactly 4 cups strained thin sauce. I used my outside grill and used N95 mask which helped a lot. Even just doing the dishes inside the home, it still hurts. Tastes amazing and super hot! Thanks for the recipe.

The only thing I would change is adding a touch of olive oil (not too much) and a little molasses......and maybe just a bit of 'Accent' brand seasoning (MSG...yeah I know, but it will only allow the taste buds to absorb the flavor rather than kick it out be cause of the raw heat).

I like a hot sauce with good flavor. If it's all burn, I don't get any enjoyment out of it, but if it has good flavor, then I can enjoy the burn. In fact, bring it on! I love spicy food.

i made a multi hot pepper hot sauce with at least 15 different hot peppers from ghost, reapers, 7 pot, red Jamaican, scorpion, Dragón breath, hot berry habanero multi colors and several really cant remember, lol! and other ingredients and absolutely the hottest thing i have ever ate! but has great taste!

@Charles did you follow his recipe for this? I have reapers,ghost,hanero,yellow tobasco,cherry peppers and a couple others. Want to make my own homemade sauce. Want it super hot,but still have great taste and edible!! I made some homemade salsa and canned about 15 quarts with all the peppers and some other ingredients last week. Its 🔥🔥🔥

Great looking sauce. Most recipes I've seen either cook or ferment the sauce. I noticed that you didn't cooked yours before straining and bottling. How long will that last in the fridge?

The ingredients are actually roasted first, then processed and strained. This will last many months or longer refrigerated.

This sounds like the perfect recipe, however, I need to know a way to do this where it will stay good sitting on the table without refrigeration. If I cook it and bottle it hot, will that do it? Or do I need to adjust the ph with vinegar and wreck the flavor?

Thanks, Uday. Set your dehydrator to 135-140 degrees F for drying peppers, or whatever setting your dehydrator recommends.

You can also process all of the ingredients first, then simmer over low heat for 10-15 minutes, then strain for a very similar sauce. I hope this helps. Hot sauce like this typically last 6 months out and 12 months in the refrigerator. Could be longer, though flavor starts to wane.

You can toast them in a dry pan for a minute or two before rehydrating, which helps loosen them up and release the oils a bit. Definitely builds flavor.

There is plenty of vinegar to keep the pH low, so it should last for many months or longer, especially in the refrigerator. It's best to test with a pH meter. Shoot for 3.5 or lower for home keeping. Many people like to keep their hot sauce outside of the fridge and have no fear that it will go bad. Others like to keep it refrigerated for safety. I keep mine in the refrigerator.

If I roast the reapers in my oven, with the spiciness stay in there? Like if I use my oven in the future after roasting the reapers, will all my food be spicy for awhile? Also, as it is roasting in the oven, will people in my home smell/ feel the presence of the spice? I am wondering because there are some people in my family who do not eat spicy.

Yes, they'll stay VERY spicy, though watch out for the fumes in the house. You can use your grill outside as well. Probably better outside.

I routinely get capsaicin on my contact lenses even though I wear gloves. I don't know how it happens but it is horribly painful. Tip: Soak the lenses in whole milk or cream for a couple of hours.

no need to get scared of it i cook alot with my reapers and i'm not going to take the pepper lightly but i remove the seeds and placenta to help reduce the heat as much as i can i love the taste they give a dish but i try to remove as much heat as i can so i'm not spooking anyone else who might eat the dish

Only if you want a smoother sauce. You don't have to strain. I usually don't. Yes, to make it milder, good idea to reprocess with other ingredients. Consider onion, garlic, carrot, even sweet potato. Or use milder peppers. Let me know how it goes for you. Enjoy.

Michael, as it is already a puree, you can realistically mix it together with other pureed ingredients (onion, carrot, etc) and enough liquid until you achieve your desired consistency. Strain for smoother or keep it thicker. You could even just mix the puree with some water and/or vinegar and a touch of salt (and other seasonings) to make a very simple hot sauce. Let me know how it goes.

Hot sauces last a LONG time because of the acidity. To make them truly self stable, make sure the pH is 3.5 or lower for home use, and process the bottles in a water bath. Or just refrigerate. Many people don't even bother refrigerating. It's an ongoing debate in the hot sauce community. Enjoy!

You can easily include a touch of sugar, honey or other sweetener to enhance the natural pepper sweetness. You'll still get a lot of heat, though!

Vinegar is a strong preservative because of the acidity, so it will have a long shelf life. You can add more acid (vinegar or citrus) to longer keeping. Shelf stable is 4.5 for commercial goods, but it's best to shoot for a pH of 3.5 or lower for home preserving.

Jay, this will last many months in the refrigerator. It's pretty high acid. Most hot sauces last a long time.

Mike, I use soap and water, though you may need to give a good scrub. Some appliances I only use for peppers, like a dedicated grinder for making spices from dried pods. I hope this helps.

A lot of sauces like this can last a year or longer in the fridge because of the vinegar content. If you get the pH to 3.5 or lower (with enough vinegar and/or citrus), it will last a long time. It can last as long outside of the fridge, though there is debate in the hot sauce community over one should refrigerate or not. I prefer to refrigerate.

Not really. This particular recipe is almost pure reapers, but you can incorporate some of your favorite flavors and ingredients. That is the fun of making hot sauce, coming up with winning combinations! I love it.
