Wait that's weird, there is so many filipino vegetarian dishes versus meat based filipino dishes that it always blows my mind that we are known for only meat dishes. We only cook a meat based food in our house maybe one times a week and that is if we have the budget for it.

If you are from the south of the Phils. there is a dish called "law-oy". The most nutritous vegetable dish imo, no oil, just veggies and water. This is like a daily dish for the average Filipinos in Mindanao. We also have our pinakbet but you use oil in it. There is bitter gourd with egg. I wonder if other nations eat bitter gourd. There is sauteed upo, adobong kangkong. Actually we can up with many veggie dishes by just sauteeing a veggie then soy sauce - baguio beans, tinangkong, string beans. My mom even have a dish I called the Pinoy version of a salad (my favorite dish)- boil tinangkong, okra, strain. Roast/grill the whole eggplant, peel off skin, then add onion, tomatoes, ginger, salt, white vinegar, and viola, so delicious. Have they also heard of our ginataang langka (jackfruit with coco milk)? We even have a vegan meatball. Instead of meat, use puso ng saging (banana heart). You would not know the difference.

Vegan isnt really amiss with filipino food. And Adobo is more popular as a meat d8sh but every filipino loves it with string beans and water spinach. Its seriously easy to go vegan with filipino food, you just need to know how to cook them... Hehehehehe

Our veggie dishes here in North Luzon relies on local grown vegetables that isn't really grown commercially but they are simple side dishes. We also have several boiled bean dishes that I barely see in South Luzon where I'm based.
