This is a really simple to prepare and very tasty snack recipe, made with cashew nuts.Moreover adding fresh mint leaves to this pakoda gives an extra flavour to it.

Ingredients
Cashew nuts 250 Grams
Coriander seeds 1 Teaspoons
Fennel seeds 1/2 Teaspoons
Ajwain 1/4 Teaspoons
Turmeric 1 Teaspoons
Chilli powder 1/2 Teaspoons
Salt 1 0
Soda 1 Pinch
Besan flour 1 Cup
urad dal powder 1/4 Cup
Rice flour 1/4 Cup
Coriander (chopped) 1/2 Bunch
Mint (chopped) 1/2 Bunch
Curry leaves (chopped) 2 Springs
Ginger garlic paste 1/2 Teaspoons
Directions:
1. in a pistol add Coriander seeds, fennel seeds, ajwain and make it into coarse powder, transfer this into a bowl and add turmeric, chilli powder, pinch of soda, besan flour, urad dal powder, rice flour powder, salt, chopped coriander, mint and curry leaves, 2 tbsp of oil mix it like a shortcrust method. In this add soaked cashew nuts, ginger garlic paste, mix it well and add required water and make it into a pakoda dough. Heat oil in a pan and fry the pakodas in a medium flame. Serve hot.
