You have probably already figured this out but a tip on vacuum packing juicy foods (squid, crab meat, etc) is to get it in the bag and then pop it back n the freezer overnight. It’ll seal up nicely in the morning.

That looks fantastic man! You don't have to go to all that work trimming it like you did, deer heart is amazing just sliced up and grilled. I'm guessing doing that made it just the best bits so it's not like it hurt. Heart and tongue are two really underrated meats.

I would of had way more meat if I left some of that stuff on for sure! I will say what I did have was perfect! Tongue though... that would take some convincing! haha

Definitely not at good as the back strap lol I usually don’t eat the heart but I have not a fan
