高筋麵粉330克 (2+2/3 杯)
牛奶180克 (12 大勺)
雞蛋1個(帶殼60克左右)
白糖35克 (2大勺+1小勺)
酵母4克 (1 小勺)
鹽3克 (1/2 小勺)
無鹽黃油40克 (3大勺)
酥皮:
6個×31克
無鹽黃油50克(軟化)(4大勺)
細砂糖40克 (2大勺+2小勺)
蛋黃1個
中筋麵粉65克(或低筋麵粉)(1/2杯+1小勺)
奶粉15克(2大勺)
(可以用5克麵粉替換)
泡打粉1克 (1/4小勺)
小蘇打1克 (1/4 小勺)
烘烤:
烤箱預熱15分鐘
180°C(或370°F)
20~22分鐘
Recipe :
Dough:
104g✖️6
Bread Flour 330g (2+2/3cup)
Milk 180g (12 tbsp)
Egg✖️ 1(60g with shell )
Sugar 35g (2 tbsp+1 tsp)
Instant yeast 4g (1 tsp)
Salt 3g (1/2 tsp)
Unsalted Butter 40g (3 tbsp)
Surface :
31g✖️6
Unsalted Butter 50g(softened )(4 tbsp)
Sugar 40g (2tbsp+2 tsp)
Yolk ✖️1
All-purpose flour 65g(or cake flour ) (1/2 cup+1 tsp)
Milk powder 15g (2tbsp)
(can be replaced with 5g flour)
Baking powder 1g (1/4 tbsp)
Baking soda 1g (1/4 tbsp)
Bake:
Preheat the oven for 15 minutes
180°C(or 370°F)
20~22 minutes

Hi, if you put in the custard filling, you don’t have to divide the dough, you just make the dough in to flat pieces and put the custard in🥰🥰❤️❤️

Hello, thank you for liking my recipe! ❤️❤️For the dough, it’s suggested to use light-tasted oil to substitute butter, therefore olive oil is not suggested. As for the surface, olive oil can’t make the crispy effect as butter did, therefore it’s not suggested as well. Again. Thank you for liking and supporting 🥰🥰🥰🌹🌹🌹

老師按著你的方法作的波蘿麵包真好吃😋!但似乎是最近我們這太熱了!上面包的波蘿皮就會沾黏在保鮮膜上?等蓋到面包時多少都會拖落一些?我還拿去冷藏一下似乎也沒有改善😂

您好,感謝您對阿栗的厚愛,很高興看到您分享和反饋好消息! 菠蘿皮油性遇到天氣熱會比較容易軟,您可以嘗試提前做好菠蘿皮,密封好放入冰箱多冷藏一下,20分鐘到半小時左右會效果更好些,如果時間太緊也可以冷凍10分鐘,取出來現做現包,這樣也好的。 😘❤️👍🤗

您好,如果您的室溫高於30攝氏度,餡料太稀軟的話,可以貼面密封好後放入冷藏十多分鐘到半小時稍微變硬一點。如果溫度不是太高也可以不用放冰箱的。😘😘❤️❤️🌹🌹
