- 裸麥粉T170:250g
- 牛奶:250g
▲主麵團:
- 高筋麵粉/T65:200g
- 全麥粉T150:50g
- 鮮酵母:9g
- 蜂蜜:20g
- 鹽:5g
- 水:100g
- 裸麥酸種:全部
▲紅酒無花果:
- 無花果:100g
- 紅酒:少許(剛好沒過無花果即可)
▲堅果果乾:
- 核桃:100g
- 葡萄乾:80g

- Honey: 20g
- Salt: 5g
- Water: 100g
- Entire rye sourdough starter

- Figs: 100g
- Red wine: just enough to cover the figs
