I understand your frustration. Recently I was trying to buy some nachos from a stadium vendor, I won't mention who, but needless to say these were "stadium" style nachos and they didn't have lettuce or tomato. They didn't even have mayonnaise. What they had was Miracle Whip. Can you believe that? Guess I shouldn't have been surprised seeing that the nachos advertised were covered in red onions. And the cheese? You guessed it, blue.

I only follow fights in passing these days but always regularly come back around to hear Uncle Chael weigh in and share his wisdom on topics like these. I cannot help but be enthralled by his stream of consciousness and his arguments even if the judges would disagree with them, they are still eloquently put forth. People go to school to learn rhetoric and this man just turns on a webcam.

When building a burger… you place the top bun (the crown) upside down and the bottom bun (the heel) right side up… on a tray… run the tray through a broiler… then start with condiments on the crown… then tomato then lettuce… place the cooked patty on the heel… then cheese on the burger (you can also place a second slice of cheese first on the heel or double the cheese on the top)… then turn over the heel with burger and cheese and place on the crown… then place the upsidedown burger on a wax coated paper wrapper… and wrap the burger… turn it over so it is now right side up… and it’s ready for the bag (if take out)… you get the point. I worked at McDonald’s for 5 months in 1990… this simple process still works

I like red onions on a burger, and yet I agree with Uncle Chael about this. This is like if Sweet Potato fries came as the standard side, and they just asked if you wanted fries with it. It's not for everyone because it doesn't work that well with the standard toppings the way a white onion does. I like a burger Midwest Backyard style, Lettuce, tomato, Ketchup, Mustard, Pickle and a thick red onion. Maybe some BBQ sauce if they have the good stuff. If I go and try some place and I want "their burger", I am not expecting this. And if I were to order it this way and not like it, that's absolutely on me. White onion is the standard because almost everyone likes a burger a little different, and white onion works with everything. Any Restuarant using red onions as the standard is doing so because it looks good on camera, not because it's the right call flavor wise. They should absolutely not be taken seriously in the Burger world.

There are a few other ways to make burgers. I don't remember the town, but they have metal burger brackets that are loaded and put into a custom made steam cooker from the 1950s. There are presses, and pressure cookers also used in various places. But without mayonnaise and a few other things. Any of them are just another burger.

Ive worked at many restaurants over my years on the west coast some very well established and high tier ones as a line cook hotside chef etc. I've never heard what chael is talking about But he's 100% correct.
