Who could resist a bread like Challah? With its beautifully braided 6-strands, glazed with egg wash, and baked to a deep burnished golden brown. It is a glorious sight to see. Cutting into the Challah, the air is perfumed with the rich smell of sweet golden honey, corn oil, and loads of egg yolks. Producing a crumb that is sightly sweet, moist, and oh so tender.

My wife has a penchant for challah and I made the "mistake" of showing this vid to her. I do a pretty good brioche bun, so the dough isn't a problem, but I do have a problem with tying shoelaces so the braid may be a problem for me. Lately I have been doing traditional Indian food (whole roasted spices, making ghee), so I know there is a fair amount of work, but man, the payoff is delicious (if she lets me have some)!

I want to share the love for challah and baking traditions. Learning to braid is a fun and challah will still taste delicious no matter how it looks. I think of cooking and baking as a labor of love. To spend time creating the food and then sharing it with our friends and family is a great joy! Sharing is caring!

I prefer to roll out the strands to 20 inches, easier to work with, the loaf is longer, and the slices are not oversized. No arguing over taste, just how I like it. We are each the Allah of our Challah.

I'm new to challah baking (2 years now) and you have by far the most stunningly beautiful challah I have ever seen. What a sight your finished product is! I'm trying your recipe today. By the way, you have the wrong music in the background. Ravel's Bolero would be better suited, especially when you're braiding that challah. Such masculine hands...You married??? :D

Hello Sandy, It is so nice to hear from you! One of the biggest variables we contend with when baking/fermenting doughs in our homes are the ambient temperature and humidity. I would recommend fermenting the dough in the range of 68º-74ºF (20º-23ºC). During the winter months, I use my microwave as a fermenting/proofing box. I bring 2-cups of water to a full boil in the microwave proof container and use that to keep the microwave at a consistent temperature. Reheating the water every hour. Because of the nice moist environment that is created by this technique, I don't cover the challah with plastic when it is braided and proofing before baking. Hello Sarah, I would recommend trying to find organic corn oil as it has a wonderful flavor and deep natural yellow color. Other wise you can use any oil you'd like. Have a great time making your Challah!

The rye flour does not get absorbed into the surface of the challah strands and because of this the braids stay more defined after proofing, egg washing, and baking. The rye flour won't be noticeable in the final baked challah. Thank you for subscribing and have a great day!

Each piece of dough needs to be the same size in order to bake evenly. The rounding of the dough into balls tightens the dough structure which allows the dough to then be shaped into strands that have the same consistency and tapered and shaped the same. The shaping organizes the gluten structure of the dough which makes it strong enough to braided without stretching and becoming missed shaped. If you just cut the dough into strips and try to braid it will be twice as long and much flatter. Each step of a baking recipe has an effect on the final baked good. If we change a step or process we change the baked good. Please let me know if you should have any other question I may help you with.

Hi your bread is gorgeous....i have a question for you plz...i thought challah bread was dairy free but the recipe has eggs? Also..i made the challah bread today..its phenomenal..thx..but i just got lost with the braid after the 2 strands criss crossed..i need more practice..i geuss

Hello Mystique Rose, It is nice to meet you. Congratulations on your baking success with making the challah! Here the information about the use of eggs: Eggs are not considered dairy as they don't contain any milk from a mammal such as a cow, goat, or sheep. Eggs are considered pareve. Pareve (or Parve) Pareve refers to “neutral” foods that contain neither meat nor dairy ingredients, nor their derivatives. All fruits, grains, vegetables, water, and minerals in their natural state are kosher and pareve. Eggs from kosher fowl are also pareve, as are fish. When teaching students to braid I have them practice with six strands of rope that have been bound together before braiding their first loaf challah. This can build your confidence the next time you are making the challah. I'm sure with time and practice your braiding will become effortless. @@JustOneBitePlease No, that is not the song, River Meditation is acoustic while the song playing during braiding is electric and a bit faster tempo, the other two songs listed in the description do not sound like it either. It is nice to meet you as well, love your challah and white bread tutorials, it's good to see you including weights with your recipes.

Hello Logesh, What a great question. The two-step mixing process for yeasted doughs is really helpful when mixing and kneading by hand. The first step of the instant yeast, liquids, and half of the flour allows these ingredients to become hydrated and well blended. The second step of adding the remaining flour and salt and mixing until a shaggy mass this helps the dough come together more effectively and makes kneading the dough much easier. As a baker, we weigh all our ingredients. That way all the proportion of the ingredients are exact and will produce the best texture and results in the bread each and every time. A dough that is sticky is not a bad thing. Most people think a dough should not be sticky and add extra flour to the dough while kneading. Making for a dry, heavy, and dense bread by changing the recipe with the additional flour. This recipe for Challah is sticky due to the honey, corn oil, and egg yolks. Once the dough is kneaded for 1 to 2 minutes it will become less sticky, develop the gluten, and become stronger.
