I'm an old South Carolina BBQ'er my self. I see you using Uncle Steve's a lot. I've used a lot of different seasoning and rubs over the years. Think I'm going to get some uncle steve's to try out. I have a Question what is the heat level of his rubs. especially the gator shack.

The Gator Shake has a citrus pop that makes it go well with many different types of food. South Texas Red has red pepper flakes and is spicy but not overpowering.
