Just don't cook the broccoli too long, because it can easily lose its structure and turn grayish. "Crisp tender" is supposed to taste best, and the bright green looks the most appetizing.

Have you ever tried boiling your potatoes in chicken broth?It gives it an extra kick of flavor.I do that sometimes to soften them for home fries too.

I had no idea it was oyster season. That's something. I made an oyster bread recipe earlier this year. I'm not sure about chargrilled oysters. I love the disclaimer about it being a little bit on the unhealthy side. Moderation is the key for these meals, shouldn't be everyday meals.

Thank you for being so detailed in your presentation! All of your dishes look so yummy. What do you suggest as a perfect ratio when making a rue, for flour and fat/butter? My gravies always come out to thick. Adding additional liquid usually strips away the natural flavor...resulting in having to add more seasoning. I cannot seem to get this one right!

You're welcome, not a problem. I appreciate the compliments. The ratio really depends on how much liquid you're planning to make. It can be tricky. For this recipe 1 to 2 tablespoons of fat and flour are all you'll need. If your gravy is too thick, you may need to add more liquid like stock instead of water. If you happen to make the gravy a bit thick next time, cut back on the flour and fat by half and try making it again. With experience, you'll get it right over time. Hope this information helps.
