Odia Chatu Besara - A recipe that's a true ode to heritage and taste!
Ingredients required:
Mushrooms - 400gms
Potato - 1 no
Oil - 1 tbsp
Tomatoes - 2 nos
Garlic - 3 cloves
Green chilli - 4
Turmeric powder - ½ tsp
Red chilli powder - 1 tbsp
Mustard oil - 3 tbsp
Salt , to taste
Coriander leaves
Curry leaves
Ingredients for the mustard paste
Mustard seeds (Rai/ Kadugu) - 1 ½ tbsp
White mustard seeds - 1 tbsp
Cumin seeds (Jeera) - 1 tsp
Onion - 1 (chopped)
Garlic - 3 to 4 cloves
Dry red chillies - 1 to 2
How to make Chatu Besara:
1.Clean the mushrooms thoroughly under running water. Cut them into halves and keep aside.
2.Cut the mushrooms into thin slices and wash well in turmeric water.
3.Next, prepare the mustard paste. Place all the ingredients listed under “for mustard paste” into a blender and grind to a fine but thick paste. Add as little water as possible in order to ensure that the paste is thick and not runny.
4.Now, to begin making the curry, take a bowl and add all the ingredients listed above.
5.Mix everything well. Now take a Kadhai or pot. Heat 4 tbsp mustard oil. Add mustard seeds and curry leaves.
6. Add all the mixture to the pot. Cover the pot and cook for 5 mins in a high flame. Then lower the flame and cook for 30 mins on lower flame.
7.In 15 mins, give the pot a shake so that it will cook well.
8.After 30 mins open the lid and serve the Chatu Besara with rice or roti.
