I keep failing on the bark man. No idea why. I have done brisket, whole chicken, pork chops, and nothing ive done so far has gotten bark like that. No idea what im doing wrong. More rub? I will say i did get the juiciest whole chicken ive ever had. But bark/skin eludes me.

Got a few questions... 1) Are you using a pellet grill? If so, it might be the pellets youre using. Nottywood Almond Wood pellets are excellent for building bark. 2) What temp are you cooking at? If youre doing hot and fast, you might be cooking it too fast before the bark is able to form.

@williamhermann6635 I am using a pellet grill. I tried pitboss Applewood, and I've tried Hickory pellets as well. Those I think were also pitboss. I got them both from Walmart. I've been cooking at 225. I was also thinking maybe it's the smoke setting. My smoker only lets you change the smoke amount at 180, so I set it and then set the temp. Edit:Also, I'm smoking for 6 hours, spritzing every hour and a half. Then wrapping when it hits ~165ish My second one is better with the juiciness and smoke ring, but it's still not what everyone else gets. And the bark has not even been close either time.

@@TheFreeman4961 Strange. I do virtually the same steps with my recteq pellet grill and the bark always comes out nicely. Ive only ever used Bear Mountain Hickory pellets and the Notty Wood Almond Pellets.

I don't think I used enough seasoning the first time. The second time, I completely covered with salt and pepper along with a cowboy rub after using the binder. The bark looked a little better than the first time. But was still no where near the darkened happiness everyone else gets. I have noticed that the smoke is in bursts so maybe it is the pellets.
