Bedmi Puri Aloo | Aloo Ki Sabzi Recipe | बेड़मी पूरी और आलू की सब्ज़ी | Chef Ajay Chopra
BEDMI PURI
SERVES 4
Preparation time : 15 min
Cooking time : 20 min
Course: breakfast
Ingredients
1 cup soaked white urad
1 tbsp refined oil
1 tsp jeera
1/2 tsp hing
1 tsp chopped ginger
1 tsp green chillies chopped
1 tsp turmeric
1 tsp red chilli powder
1 tsp coriander powder
1/2 tsp garam masala
1 tsp salt
1 tsp amchur powder
1 tbsp chopped coriander
For The Dough
1/2 kg atta
1/2 cup suji
1 tsp ajwain
1/2 red chillie powder
1/2 tsp turmeric powder
1/2 tsp salt
4 tbsp ghee
oil for deep frying
ALOO SABZI
Ingredients
1 tbsp ghee
1 tsp jeera
1 tsp hing
1 tsp ginger
2 nos green chopped
1 tsp turmeric
1 tsp red chilie powder
11/2 tsp coriander powder
11/2 tbsp besan
1 tsp soaked methi seed
1 cup chopped tomatoes
1 cup boiled peeled potatoes
1 tbsp fresh chopped coriander
METHOD
1) Heat oil in the pan
2) Add jeera allow it to crackle
3) Add hing, chopped ginger, green chillies
4) Add turmeric powder, red chilli powder, coriander powder and garam masala powder and cook it at low flame.
5) Add soaked urad dal,salt and amchur
8) Cool the mixture for 5 mins and set aside
9) Grind the mixture into coarse texture.
10) Add chopped coriander in the mixture.
11) Take ½ kg atta and add suji to it
12) Add red chilli powder, turmeric powder, salt and add ghee.
13) Rub the flour nicely till it becomes crumbly.
14) Knead the tight dough using water as required.
For aloo sabzi
15) Apply oil to finish the dough.
16) Heat ghee separately in a pan.
17) Add jeera to crackle
18) Add hing
19) Add chopped ginger and green chillies
20) Add turmeric and red chilli powder.
21) Add coriander powder.
22) Add besan and roast for a while.
23) Add overnight soaked methi seeds
24) Add splash of water
25) Add one cup chopped tomatoes
26) Add water and stir it nicely and amchur powder and chopped coriander
27) Add crushed potato
28) Add fresh chopped coriander
29) Divide the dough in equal portions.
30) Make a cup using thumb and finger
31) Add stuffing and secure it nicely
32) Heat oil on a medium flame
33) Apply a little oil on the stuffed dough and roll it like a puri.
34) Deep fry the Puri until crisp and puffed.

अजय जी, मैं ४६ साल से अमेरिका में हूँ।भारत में मेरठ से हूँ। १५ साल पहले पत्नी का देहांत हुआ। उससे पहले साल मैं कम से कम २५-३० बार आलू पूरी का नाश्ता रविवार हो होता था। त्योहारों के दिन आलू कचौरी और कद्दू का खाना होता था। हमारी recipe आपकी रेसिपी से बहुत मिलती है। ना प्याज़ ना लहसुन, बस स्वाद ही स्वाद। मैं आज भी अपनी बेटी के लिए हर करवा चौथ पर ये खाना बनाने की कोशिश करता हूँ। फ़र्क़ ये है कि मेरठ में इसके साथ गोकुल प्रसाद हलवाई की जलेबी नहीं ६” का गोल जलेबा खाते थे। ये recipe पोस्ट करके, ढेर सी यादें ताजा करा दी। बहुत बहुत धन्यवाद। ……अनिल बंसल। Buffalo, NY.

अजय चोपड़ा जी सच बात कहुँ तो आपको बुरा लगेगा। लेकिन सच बात ये है कि ये बेडमी पूरी और आलू की सब्जी बनाने का तरीका है ही नहीं। आप इसको उड़द दाल की कचौड़ी या जो मर्जी कहें लेकिन ये बेड़मी पूरी तो कहीं से भी नहीं है। कभी जाईये बृज में। आगरा मथुरा वृन्दावन तो आपको बेड़मी पूरी किसे कहते है पता चलेगा। और रही बात आलू की सब्जी की तो वो भी बेड़मी पूरी वाली सब्जी आप नहीं बना पाए हैं। आपको तो ये भी नहीं मालुम की बेड़मी पूरी को एक बार में नहीं बल्कि दो बार में सेका जाता है। ऐसे ही आलू की एकदम गाड़ी सब्जी दी जाती है न की आपके जैसी पानीदार आलू सब्ज़ी। सब्जी में हींग डालने का तरीका ही गलत है। कृपया इसको बेड़मी पूरी कहना बंद करें।

No questions about the wonderful recipe of the chef. One little suggestion : Rather than adding kachcha besan, one can roast besan separately as part of advance process consisting cutting and chopping ginger, green chilli etc. to get rid of awaiting the moment whether or not besan has been done. Your nose may not always be able to transmit the signal with perfect timing. Happy cooking!

This is not exact bedmi poori...this is urad daal ki kachori made in Lucknow, Kanpur and nearny regions.... bedami poori is made with dal paste mixed into atta dough ... Looks like Chef sir is missing the basics... bedami poori is different from urad dal kachori

अजय चोपड़ा जी सच बात कहुँ तो आपको बुरा लगेगा। लेकिन सच बात ये है कि ये बेडमी पूरी और आलू की सब्जी बनाने का तरीका है ही नहीं। आप इसको उड़द दाल की कचौड़ी या जो मर्जी कहें लेकिन ये बेड़मी पूरी तो कहीं से भी नहीं है। कभी जाईये बृज में। आगरा मथुरा वृन्दावन तो आपको बेड़मी पूरी किसे कहते है पता चलेगा। और रही बात आलू की सब्जी की तो वो भी बेड़मी पूरी वाली सब्जी आप नहीं बना पाए हैं। आपको तो ये भी नहीं मालुम की बेड़मी पूरी को एक बार में नहीं बल्कि दो बार में सेका जाता है। ऐसे ही आलू की एकदम गाड़ी सब्जी दी जाती है न की आपके जैसी पानीदार आलू सब्ज़ी। सब्जी में हींग डालने का तरीका ही गलत है। कृपया इसको बेड़मी पूरी कहना बंद करें।

Chef, I am from old Delhi and I know the authentic taste of Aloo sabzi. When I made it today as per your recepie, it came out taabad-tod, just like my childhood in old delhi and Mathura....loved it...felt the taste in mouth for a few hours....Thank you

Dear Ajay Ji Bedmi and kachori are two different things. Bedmi is made with stuffing of uncooked urad dal not with cooked one. In Agra u will get Bedmi and in Mathura you will get kachori. You have mixed two recipes. He he

Madam ji this is uncooked urad dal only I have given a tempering just like mathura . You get this as kachori in all of UP and the maida one is called khasta

@@ChefAjayChopra Sirji ,n bedmi , tempering is not given and it is not called kachori. They are two different things. So it may be your version of making it. Kachori is made by stuffing the dal.

Is there a difference in Delhi s badmi aloo sabzi and Agra mathura one ? Bec I have seen in Delhi they don’t put tomato’s in it only methi … flavor Badmi poori always yummy Any time any type 👍🏼
