OK, so, this just popped up in my feed out of nowhere (glory to the mysteries of the Algorithm), and while I am certainly impressed with the snausage, I am stunned that in my 50 decades of existence I've never, NOT ONCE, ever considered a double-decker hotdog. PINK SALT QUESTION: What do you have to do to make sure you don't die when you use/eat it? Cook at a specific temp? I have always been afraid to use it.

That's what I wanna know. I've always been under the impression that directly ingesting pink curing salt would make you really sick if not kill you. Everytime I've used it, it was for brining/curing. I've always washed it off really well before cooking/smoking

In the longer video he explains that the specific amount needed has been weighed to the proportion of meat used & recommended that if you follow the recipe that you follow it exactly Also he is using the #1 pink salt not the #2 pink salt which you absolutely do not want to ingest ever There is another chef on KZfaq who was explaining why you would want to use the pink curing salt for making hot dogs & what conditions need to be met to not use it. My understanding was that had josh not been smoking them & had boiled them instead, he might have been able to get away with skipping the pink salt but I’m not sure. I’m still new to sausage making & working out when to cure & when it’s ok to not cure

If you guys think of making this like ever you're going to use curing salt 1 and you need to wait at least 12 hours after making the sausage before consuming. Cure 1 contains nitrites that need to convert to nitric oxide in order for it to be safe for consumption.
