Guys, this time I am bringing the sizzling flavours of Kolhapur to your kitchen with my absolutely delicious recipe of Chicken Kolhapuri. It is simple and yummy. An amazing mixture of flavours is a total treat for Chicken lovers. Enjoy and stay tuned for more.

Ingredient Quantity
For Marination:
Chicken on Bone 800 gm.
Ginger-garlic paste 1½ tbsp
Lemon juice 1 no.
Red chilli powder 2 tsp
Turmeric powder ½ tsp
Garam masala powder 1 tsp
Salt to taste
For Masala:
Bay leaf 1 no.
Black cardamom 2 no.
Green Cardamom 4-5 no.
Cinnamon stick ½ inch
Cloves 4-5 no.
Star anise 1 no.
Mace ½ blade
Black peppercorn 1 tsp
Coriander seeds 1 tbsp
Cumin seeds 1 tsp
Dry red chilli 4-5 no.
Garlic chopped 1 tbsp
Ginger chopped 1 tbsp
Dried Coconut 100 gm.
Poppy seeds 1 tbsp
White sesame seeds 1 tbsp
Onion Slice 2 no.
Tomato chopped 2-3 no.
Water ¼ cup
Oil 6 tbsp
Salt to taste
Coriander sprig for garnish
Method:
For Marination:
• Wash and pat dry the chicken and place it on the bowl.
• Add ginger-garlic paste, lemon juice, red chilli powder, turmeric powder, garam masala powder and salt, mix well and keep it aside for 20-25 min.
For Masala:
• Heat 3 tbsp of oil in a kadai; add bay leaf, black cardamom, green cardamom, cinnamon stick, cloves, star anise, mace, black peppercorn, mix well and sauté for 1 min.
• Add coriander seeds, cumin seeds, mix well and sauté till spices are fragrant.
• Add dry red chillies, garlic chopped, ginger chopped, mix well and sauté for 30 sec.
• Add dried coconut, poppy seeds, white sesame seeds, mix well and sauté for another 1min.
• Add onion slice, mix well and sauté for 4-5 min. on low flame.
• Add chopped tomato, mix well and sauté for 4-5 min.
• Remove in a bowl and cool it to a room temperature
• Take mixer jar, add prepared masala and ¼ cup of water and grind to a smooth paste. Keep it aside.
• Heat 2-3 tbsp of oil in kadai; add marinated chicken and sauté for 8-10 min.
• Mean while Put little water to the marinated bowl and mix well. Keep it aside.
• After 10 min. add prepared paste to the pan and mix well and cook for 4-5 min.
• Put water in a mixer jar, mix well and put into the pan and mix well.
• Add salt, mix well and cover and cook for 15-20 min.
• Remove in serving bowl, garnish with coriander sprig and serve hot.

I have just returned from India and this is by far my favourite curry, spicy and sauce that sticks to the chicken. I can't wait to try this recipe and will certainly give my feedback when I've done it. Thank you for including the ingredients and method in English.

I will always love harpal Singh sokhis videos I would never dislike his videos. Harpal Singh sokhi is a true master chef who knows how to cook the best Indian cuisine ever. I think it's a great shame people dislike his videos. His videos are the best. His cooking is absolutely amazing and the very best of Indian cuisine dishes. I think it's very important to support chef with his cooking. I don't understand why people would dislike his videos. I think that they are missing something here. Harpal Singh sokhis videos will always be the best I don't understand why 6 people would dislike him I think his food is fantastic and the very best on his KZfaq channel

Dear sir, i love your recipes and presentation as such. I would appriciate, if you can explain, relation between quantity to onion to tomato to serving quantity. Now my typical requirements was, i wanted 1.5 kg and with lots of curry in it. Kindly suggest the solution.

So the protein is always 40% of the total weight of the gravy for example total dish with protein 1 kg 400 gms chicken, 600 gms gravy..

Why not straight to grinder from pan then please.? Also please , why when serving is the colour browner than in the final cooking?.

Hi Clive it is hot hence you need to rest before grinding, also when you grind and cook again the cooler becomes brighter because of the chillies.

There is not a grinder apart from yours that will grind all that amount of wet spices without costing a fortune

Yes in India we are used to heavy duty home grinders and that is why it works very well, the RPM rate we choose is around 1000-1200
