So here I have another delicious and easy recipe with the banana peels you guys love so much: Swedish meatballs! made with banana peels, like seriously, a surprisingly delicious meal you can put together in no time at all! This recipe is super savory, simple to make and will please even the pickiest of the palates!

INGREDIENTS:
For the meatless balls:
The peels of 6 medium greenish bananas - if your bananas are riper, you peel them, then scrape out the peels' inner white part and discard it (or save it for your smoothies!)
3 tablespoon of ground flaxseeds mixed with 6 tablespoons of water
1 small onion that's been minced and sweat in a skillet for 5 minutes
2 tablespoons of finely chopped parsley
1/3 cup of cornstarch or potato starch
1/2 cup of breadcrumbs
Salt to taste
2 teaspoons of vegetable bouillon
1/2 teaspoon of garlic powder
1/2 teaspoon of onion flakes (or powder)
1/2 teaspoon of dry oregano
1/3 teaspoon of smoked paprika
A pinch of nutmeg
A pinch of garam masala
1/3 teaspoon MSG (optional)
1/3 teaspoon black pepper
1 teaspoon of miso paste
Oil for frying
For the gravy:
40g of butter
40g of all-purpose flour
800 ml of veggie broth with 2 tablespoons of soy sauce
Salt if needed
Mashed potatoes, green beans and lingonberry sauce for serving, or any other vegetables or noodles of your preference​! ;)
METHOD:
Wash the banana peels thoroughly in running water, roughly chop them, then add to your food processor, pulse it 8 or 9 times, scraping the sides when needed.
Add the processed peels to a bowl, then add all the meatless balls ingredients. Mix it to combine, make small balls, place them into a tray, cover with a cling film and put them in the refrigerator for at least 1 hour and 40 minutes.
Remove from the fridge, fry them in hot oil in medium heat for 2 to 3 minutes each side or bake them in the oven at 350℉ for 20 minutes, flipping them halfway through.
Remove the meatless balls from the skillet or oven, place them on a cooling rack or paper towel, reserve.
Making the Gravy:
Add the butter to a pot and allow it to melt on medium-low heat. Once the butter is melted, add the flour and whisk to combine. Keep whisking for about 5 minutes or until the mixture is golden. Add the veggie broth with the soy sauce little by little, whisking every time you pour the liquid. Taste to check if it needs extra salt.
Serve the Swedish meatless balls with a side of greens and mashed potatoes, lingonberry sauce and enjoy!

Greetings Chef Jana! My wife used this fantastic recipe of yours this evening (here in the U.K.) to make our dinner. Wow. Just wow. I made them today and I don't understand it. I prepared them with my own hands. I cut the freaking banana peels. I know with 100 % certainty that I did not put any meat in there and yet I feel tricked into believing these were actual meat balls. This is easily the best homemade minced meat replacement I have encountered so far. It's Unreal.

When you made the pulled pork recipe you said this needed to be removed to take away the flavour of banana ? I know this is a small issue but I ‘d like to understand it better thank

I love this dish! You know I am Swedish and when it comes to lingonberries we use them a lot. A favorite is to whip cream and put some lingonjam in it. It tastes wonderful and is a perfekt side dish for hash brown or pancakes 😊. Thank you👍

I'm subscribed and in awe each time there's a new recipe, but looking for older recipes I found this. I'm Swedish (Goran is not - borrowing husband's account) and it certainly looks like our meatballs, but I doubt they taste like them with garam masala and smoked paprika. However, Swedish meatballs are not very exciting, so I don't care 😁 I'm sure these are delicious.

Chef Jana THANK YOU ! Love your vegan take on the swedish meatballs - I'm a Native New Yorker from the USA. Reminds of of waaay back when I ate meat, used to love this meal when I went to the IKEA store, Lol 😄 I know that you use greenish, unripe bananas, just curious... could the recipe still work with ripe bananas ? Would they just come out slightly sweeter or too mushy ? I was thinking to try it like that, but wanted your expert opinion first. Hi Samantha! Yes, the banana peels are very meaty, never ceases to amaze me! If you use riper bananas (I don't advise you to use ripe ones since the peels have already absorbed the fruit sugar), you just scrape the peels white inner part, so you get rid of any possible sugar. Let me know if you make them :)

I tried one of your banana peel recipes awhile ago -so good! I want to use to make my MIL"s classic 'Russian Goop' meatballs! Nutmeg is the main spice (a bit of garam Masala would be a nice addition!) Sautéed with chopped onions in cream (coconut milk!) And topped with sour cream (c milk yogurt! ) .... mmmm

Wow I clicked on this video SO FAST! Another amazing looking recipe that I'm going to have to try!!! Have you ever heard of "mushroom seasoning" or "mushroom broth powder"? I think you'd have so much fun playing around with it and it gives a really nice "meaty" flavor to the dishes it's added to. I'm sad lingon berries are so expensive here in the US but I will have to try to locate some for this dish. Thanks so much Jana!

If you want a substitute for the tyttebær/lingonberry taste, you can use strawberry, currant and/or cherry jam/jelly, adding citrus (lime or lemon) to give the jam/jelly a bitter after-taste. Lingon is a semi-sweet berry/jelly/jam with a slightly bitter aftertaste.

Yes, I make my mushroom powder by blending Asian dried shiitake, it really adds a nice depth of flavor to the food... You can also find Lingonberry sauce at Ikea, their prices are fairly low... :)

Wow Jana, this looks so delicious 😋😋😋! Unforturtunately, I can't eat onions and similar veggies besides garlic. Do I need to substitute the volume of the onion or do you think I can just leave it out and go with 2 cloves of garlic? If I need the volume I would try to substitute it with some finely chopped carrots/fennel/celery, you think this would work?

I know very little about it. It is a flavor enhancer, right? To what extent is it OK to use MSG? Ok, I tried the recipe, although with a few adjustements -as always-, and the outcome was somehow quite bitter. However the next day the bitterness was almost completly gone and they where very plesant to eat. One think that really went well was the use of chikpea flower instead of corn/potato starch. Nice and bouncy. Again thank you for this recipe and for all the other as well. You have been very helpful in my housholds effort to go vegan

It looks delicious! But I have a question: green bananas are not nice to eat as fruit, I always eat them ripe, when the peal is yellow. What do you do with the banana itself? Or can I use the yellow, more ripe peel also?

I have a few recipes using the bananas here on my channel but you can make smoothies, ice creams, chips, curries, stews, soups, cakes, etc... another idea is to collect the peels as you eat the bananas and freeze them for later use ;)

@@achlasachdev If it is the seeds that bother you, you can make a gel to use instead. Flaxseed Gel Cubes. A way to always have Flaxseed Gel on hand is to prepare it and freeze it in an ice cube tray. To do this you will need 3 cups of water and 1/3 cup flax seeds. Bring the water to a boil, add the seeds and cook at a low boil for 25 to 30 minutes. Pour the mixture through a strainer to separate the seeds from the gel. Discard the seeds and then pour the gel into ice cube trays and freeze. After the cubes are frozen they can be removed and stored in zip lock bags in the freezer and used as needed. One cube is the equivalent of one egg in a recipe.

The bananas are usually highly sprayed with all those chemicals on the way from tropical places and hard to find organic banana(at least where i am) and that concerns me, any good idea?

Yes, most vegetables nowadays, specially the ones with harder peels are heavily sprayed and the chemicals don't stay in the skin, rather, it penetrates through the fruits and veggies so it protects it against plagues and fungus, what I usually do is I try and buy organic and when I cannot buy organics, I simply wash the vegetables under running water, scrubbing them with a brush, then let them sit in a water/vinegar/baking soda solution for 5 minutes, if I'm using the peels as well.

I also use vinegar baking power combination for washing fruits and vegies as well:) I was wondering if there was another method you use because often i feel like that isn’t enough. I guess I will search for organic bananas with patience! Also it is so surprising to see Ssamjang sauce and Gochujang sauce from korea in your refrigerator :) thank you for keeping up with your great recipes!!

Even organics have some kind of pesticide.... I hear soaking in food grade hydrogen peroxide is helpful. But do research...
