A great, not food related way to use up banana peels is to put them into water, leave them for a couple of days and they make a great plant fertilizer!

Thank you. Your videos snapped me out off lethargic eating. I quit most of the processed vegan foods and I'm eating simple since cooking while struggling with depression is hard for me. I boil a potato and sautée asparagus, or mushrooms and that's dinner, or make lentil soup with just and onion in 30 min, or an eggplant with a red pepper and some chickpeas from a can. I feel sooo much better. Thank you

Hi! I enjoyed Chef Jana’s recipes and tried them, it was a blast to add a new no-waste item to my repertoire 🤗 I already make pesto out of radish and carrots tops, salads out of beetroot leaves, I save onion & garlic peels and bottoms to make broth, I sauté cauliflower leaves and stems, I slice thinly broccoli stems to add to salads and soups, I make cheese out of okara (the leftover pulp from making soy milk) and cookies out of oat milk okara… and my favorite is watermelon rinds : I make noodles, jam, pickles (tsukemono), kimchi, grilled steaks out of it, so versatile and so plentiful ! There is always very little food in my kitchen bin 😂

@@flow4458 I think I saw this tip from a video of Japanese chef making kombu dashi stock and vegetable stock, but do NOT boil it/bring it to a boil. Treat it like you would tea (which is basically what you're making, veggie scrap tea). Just as you don't add freshly boiled water to tea but rather allow it to cool for 5 min first (to keep the tea from becoming too bitter). Don't boil the stock or bring it to a boil. Keep it on medium/medium low and allow it to only come to a simmer. The lower heat should leech out less of the bitter compounds from the veggies while still making a flavorful stock. You could also try to "cold brew" the vegetable stock, as is done with kombu dashi, but I've never tried that for veg stock.

Just tried this! I'm not big on spicy so I used a little bit of chili flakes/red pepper..and I didn't have any oranges on hand so I used dried orange peel (spice) & little bit of grape juice & date syrup for extra sweetness. Also added some smoked paprika for some extra flavor. I was scared to try this cuz my banana peels been in the fridge for a minute.. and I was like man, idk if this can be good let alone using banana peels that have oxidized a Lot in the fridge. Lol they look black, but taste soo good! The soy sauce deff helps a LOT with the flavor.

Until now I just used banana peel only in Currys or Taccos, but I am gonna try the meatball recepie. (will it be less bread-like if there‘s a lower ratio of flour and breadcrumbs? 🤔). Thanks for sharing. Please don‘t feel bad about not using the peel before - one can‘t know and try everything at any time. In my experience it works with peels from more brown bananas as well. It‘s just a little difficult to spoon out and especially cut them with a fork because the peel is thinner. But cutting with a knive worked just fine. And I also store the peel in my freezer. So I don’t need to „open“ a new banana when I just need the peel. It‘s just important to spoon out the parts of „flesh“ and cut it before you freeze it. It takes much less space in the freezer and I found the „spooning out“ wasn‘t that nice with frozen warmed up bananas.
