A popular street food in Jodhpur, I had this dish during my last trip to the city. I so fell in love with it that I had to get the recipe from the vendor! Here's the famous Jodhpur style Mirchi vada recipe as I learnt it.. Happy cooking :)

MIRCHI VADA
Preparation time: 25 minutes
Cooking time: 20 minutes
Serves: 3
Course: Snacks
Cuisine: Rajasthani
Ingredients
For masala
½ cup Coriander seeds
¼ cup Fennel seeds
⅛ cup Chilli flakes
For filling
3-4 boiled potatoes mashed
1 tbsp prepared masala
1 tbsp coriander leaves, chopped
1 tsp dried mango powder
Salt to taste
½ tsp cumin powder
¼ tsp asafoetida
6-7 bhavnagri chillies
For batter
1 cup Gram flour
Salt to taste
1 tsp turmeric powder
½ tsp red chilli powder
Water
Oil for frying
Process
● In a pan, add Coriander seeds, fennel seeds and chilli flakes dry roast them and coarsely crush it.
● In a mixing bowl, add boil potatoes and mashed them add prepared masala, coriander leaves, dried mango powder, cumin powder, asafoetida and salt to taste mix well.
● Deseed the bhavnagri chillies and stuff the prepared aaloo masala into the chillies.
● In a mixing bowl, add gram flour, turmeric powder, red chilli powder and salt to taste and mix well.
● Add water as required and adjust the consistency.
● Now dip the stuffed mirchi into the batter and coat completely.
● Deep fry in hot oil on medium flame, stir occasionally until golden brown and crisp.
● Drain off the mirchi vada over kitchen paper to remove excess oil.
Serve with green chutney and tamarind chutney.

Ranveer sir, I have made an improvisation. I have seen this vid in morning, spent a bad day in office and become determined to make mirchi vada. But alas! There is no big mirchi in my house and cant find any in the local market today. So I returned home at 6 pm, made the potato mixture and picked up 4 ripe tomatos. I cut them into 4, discard the seeds and stocks, and stuff the potato mixture and fry it in beson batter as you have shown. Voila!!! They are superrr delicious. Just you need a bit more salt. Those melt in the mouth tomatos and that fragrant potato mixture are heavenly. Thanks a lot, sir. You have made my day.

Jodhpur= Capital of Marwar. Marwar is desert part of Rajasthan. Who ever lives in and belongs from Marwar including Jodhpur are called as the Marwaris. Irrespective of caste and occupation. 🙏
